Is it possible to apply our points towards the cruise and pay cash for the remainder?

Yes, but you can't mix cash and points for a passenger.

If you are traveling with more than 2 passengers in a cabin, many DVC members use points for the first 2 and pay cash for the 3rd or 4th in the cabin. On any cruise, what it costs for the 3rd or 4th is much less than the first 2 in the cabin. (Especially if they are children)

Hiiiiiiiiiiiiiii, we usually pay cash for one of us. Your points go further at your dvc resorts. If you have the cash use it on the ship but use your points if you want to not use cash. You get better value at a dvc resort.
