Crowds before Thanksgiving + vegan dining options

My little sister, fiancé and I are planning on going to the parks for two days either on Sunday/Monday or Monday/Tuesday before Thanksgiving and I have two questions!

First, how are the pre-Thanksgiving crowds? The crowd calendar on Orlando Informer has Sunday the 23rd and Monday the 24th as moderate while Tuesday the 25th is listed as busy. Would our best course of action be Sunday/Monday or Monday/Tuesday? I figured it being the weekend that Sunday would be listed as busy instead of moderate, but I guess not? Are the parks usually very busy during the beginning of Thanksgiving week?

And secondly, does Universal have any good vegan options in the parks? My sister is a vegan and I'm worried about her dining options. I've looked at some menus and the options seem pretty limited, especially for breakfast.

In the dining sticky, if you read the initial post, I have outlined many vegan options. There are some new restaurants that I haven't gone through yet.

I was wondering the same thing too about the crowds the days before Thanksgiving. I'm planning a trip to Universal that week and trying to figure out the best days to go and when to avoid the parks.
