We went last year January 1st to USF first and it was empty after January 2 or 3 and then for 10 days to Disney and it too was very quiet. So nice, enjoy !!!
It will be very crowded the first half of the week and less so toward the end.
Weather is completely unpredictable..you could have warm days (70s or 80s) with cool evenings. You could have mornings near freezing with afternoons in the 40s or 50s. Or you could have anything in between.
This is something I know a lot about. For January 1-2, the crowds will be horrible...imagine a sea of people in Fantasyland! Then, it will taper off around the 4th and stay uncrowded for the rest of your stay.
As for weather, plan on buying or bringing sweatshirts and long-sleeved shirts...it will be extremely cold! And that's almost 90% guaranteed.

Us too...I go this time every year....I have never really experienced too many crowds after the 3rd. Others on the board will disagree though. Your looking at generally 15-20 minutes waits and normal lines 40+ minutes for SM, Splash mtn, TOT, RNRC, etc....anything that is a major headliner. But it is not too hot, so the waits are not unbearable.
We were there 1/2 and 1/3 last year and it was very crowded. We only did Magic Kingdom. We attempted Animal Kingdom but left after a few hours because of the crowds. That being said, if you have a good attitude you can get done what you want. You just have to be patient and get to the parks early.
