My arrival day will be Sunday, January 4th, the last day of the Christmas-New Years busy season.

I made reservations for the Garden Grilll for around 7 pm. Was this a bad idea? Can I expect a long wait time at the podium?

I'm intrigued in a way because I've never seen WDW in high season (it'll be interesting to see that wait time sign board in Innoventions Plaza!), but at the same time I might not enjoy a 30+ minute wait for dinner. If the wait time is 30 minutes to an hour or more, will they let us leave and come back?

I do not think you will experience that kind of a wait for dinner. I went during Thanksgiving week last year and the wait was only about 10 minutes. Even on Thanksgiving Day I only had around a 10 minute wait. The longest wait we experienced all week was at Sci-Fi, and it was aprox. 20 minutes on an EMH evening.
