Crockpot/ slow cooker users

I used mine yesterday and the day before. On Monday, I put a boston butt in it and poured some bbq sauce over it, salted and peppered it and put the lid on. Turned it on low and let it cook all day. Wonderful for dinner. After dinner, I tore the meat apart and put it in a ziploc bag. Yesterday morning, I put the meat in the slow cooker on low, put more bbq sauce on it and had bbq sandwiches for dinner!! YUM!!!

On Saturday, we had roast in it. Put in the roast, salt, pepper, one pkg of dry onion soup mix and one can of cream of chicken soup. Put the lid on and turn it on low. Makes a great roast with gravy already made!! YUM!!! All you need is the rice or mashed potatoes!!

I also tried a chocolate cake in it the other day. That has me soooo addicted!!!

That was the day after I cooked the dry lima beans in it!! Add in some ham, bacon, whatever seasoning you want, put in a bag of dry beans and fill it 3/4 of the way up with water. Cook on low all day and enjoy!! Cheap and good!!

I am making meatballs in mine today. They are the best, because they get so infused with flavor by cooking in the crockpot. Basically, I make meatballs (hamburger, breadcrumbs, egg, spices, garlic salt) the night before and refrigerate the balls. I have always done this and they don't fall apart that way and it makes the morning part go quickly. Then, in the morning, I put a large can of ground peeled tomatoes, small can of tomato paste, italian seasoning, salt, pepper, about a half cup of water, a little crushed red pepper, a little minced garlic, and two tablespoons of sugar into the crockpot. Give it a stir, in go the meatballs, cook it all day. I stir it a few times to make sure it mixes up and the meatballs get circulated. Super easy, and it is usually what everyone requests I bring to parties, etc.

If I hadn't had to call in sick today with a stomach thing then I would have food cooking in mine right now. As it is I think I will put something in it in a few minutes.
I've been using it a lot lately and I decided that in 2009 I am going to use it most weekdays for our dinners. It is the only thing that makes homecooking convenient enough to draw us away from eating out so much.
And we really want to watch the budget this year.
BUT I am having a bit of a problem finding enough low carb receipes for us. I've got a couple of dozen but I'd like a lot more. Could anyone point me in the right direction?
 
I use mine at least once a week. Here are some of our favorites:

French Dip Au Jus SC


Ingredients:

4 pounds rump roast
1 (10.5 ounce) can beef broth
1 (10.5 ounce) can condensed French onion soup
1 (12 fluid ounce) can or bottle beer
6 French rolls
2 tablespoons butter

Method:
1. Trim excess fat from the rump roast, and place in a slow cooker. Add the beef broth, onion soup and beer. Cook on Low setting for 7 hours.
2. Preheat oven to 350 degrees F (175 degrees C).
3. Split French rolls, and spread with butter. Bake 10 minutes, or until heated through.
4. Slice the meat on the diagonal, and place on the rolls. Serve the sauce for dipping.


Tweak: 1) Add 1 packet Au Jus seasoning, garlic powder, salt and pepper.
2) Serve with sautéed onions and melted provolone

Jambalaya

Ingredients:
1 large onion, chopped
2 medium green bell peppers, chopped
2 medium stalks celery, chopped
3 garlic cloves, finely chopped
1 can (28 oz) diced tomatoes, undrained
2 cups cooked smoked sausage, chopped
1 tablespoon parsley flakes
½ teaspoon dried thyme leaves
½ teaspoon salt
¼ teaspoon pepper
¼ teaspoon red pepper sauce
¾ pound uncooked peeled de-veined medium shrimp (thawed)
4 cups hot cooked rice

Method:
1. Mix all ingredients except shrimp and rice in a slow cooker. Cover and cook on low 7 to 8 hours.

2. Stir in shrimp. Cover and cook for abut 1 hour longer until shrimp are pink and firm. Serve over rice.

Makes 8 servings: 260 cals 10g fat 30g carbs 12g protein
