Crockpot Recipes

I found a good sounding chix recipe and it's in the crock-pot right now. I'll let you know how it is later:

CrockPot Brown Sugar Chicken Recipe
It should be noted that this chicken has been named "Candy Chicken" in our house. I don't think my kids have ever eaten so much chicken in their lives. If you are bored with dried out, boring chicken, you must try this.

You simply must.

Go.

Now.

Go to the store and buy the ingredients.

go.

The Ingredients.
--12 boneless, skinless chicken thighs, or 6 boneless, skinless breast halves
--1 cup brown sugar (it's okay. you can brush your teeth after.)
--1/4 cup lemon-lime soda (stay with me...)
--2/3 cup vinegar (I used white wine, but think regular white would be fine)
--3 cloves smashed and chopped garlic
--2 T soy sauce (La Choy and Tamari wheat free are GF)
--1 tsp ground black pepper

The Directions.

Use a 5-6 quart crockpot for this recipe.

Plop the chicken into your crockpot. Cover with the brown sugar, pepper, chopped garlic, and soy sauce. Add the vinegar, and pour in the soda. It will bubble!

Cover and cook on low for 6-9 hours, or on high for 4-5. The chicken is done when it is cooked through and has reached desired consistency. The longer you cook it, the more tender it will be.

Serve over a bowl of white rice with a ladle full of the broth.

Does anyone know that if this would still turn out OK if I change the soda to diet, and the brown sugar to Splenda brown sugar?

I know that serving it with brown rice would be fine, I was just curious about the stability of the two "diet" items being cooked in the crockpot for this duration. Has anyone modified this, or a similar, recipe?

I have T2 diabetes and have only recently really buckled down (should have been all along as I was diagnosed a year ago but I guess the seriousness of it did not compute at first). I am now modifying recipes and changing how, and what, we eat. TIA! :flower3:

I would love to know this as well. Also, does anyone know of a site that has low fat crockpot recipes? I'm watching my cholesterol so most of the beef recipes are off my list.
 
I had a quick question about the crock pot. I am going to try a recipe tomorrow that says to cook on high for 6-7 hrs. We are going to be out of the house for about 9 hrs. can I over cook something in the crock pot or should I wait for a day when I will be home to turn it off.

Unfortunately, diet soda gets REALLY nasty when cooked for that long. I can't speak for splenda though.
 
The potatoes I put in the crock pot with the pork roast....OMG!!! They were the best!! They were soft and actually creamy!! The best baked potatoes I've ever made!!

I wrapped each individually in aluminum foil and just put them on top of the roast so that they would cook, but not in any liquid or fat from the roast.

I'm going to cook my yams this way for Thanksgiving!

I was diagnosed in April with T2 Diabetes.

I don't know about the Splenda but I cook in the crockpot all the time with diet soda and never had a problem with it tasting bad.

Italian beef

Get a big beef pot roast and toss it in there. Slice up two onions in fairly thick slices. Add one jar of pepperocini, including the juice. Add some celery salt to taste.

From there, just let it cook on low all day until the meat falls apart with a fork. Serve the meat on big hoagie rolls with mozzarella (fresh if you can swing it), a little more celery salt, and anything else you'd like, like tomato.

Cripes, I need to stop at the supermarket on the way home, mmmmm.

I'm not an expert by any means, but I would worry about the liquid drying out while on high. I would not think an extra two hours would cause it to happen, but I'd probably be freaking out.

On low, I wouldn't give it a second thought and have found it almost impossible to overcook anything.
