When almost ready to stop cooking - maybe with 10 minutes to go - I tear up a couple of SOFT CORN tortillas and let them cook in the soup. It makes it a little thicker and more tortilla - like.
I make a crockpot chicken taco soup that is really good. haven't made it since last year though so let me think......
2 or 3 chicken breasta
1 package taco seasoning
1 can corn
2 cans Rotel
1 can chicken broth or beer
1 can black beans
1 can chili beans
1 can tomato sauce( I think....lol.. I seem to remember there are 7 cans to open!)
1 small onion chopped
Pour it all in the crock, place the chicken in making sure it is under the liquid. Cook for about 4-5 hours, remove chicken and shred and then put it back and cook for another hour or so. Serve with a dollop of sour cream and chips.
Here's my made-up recipe for Tortilla Soup. I usually use ground beef but you can also use chicken.
Layer the following ingredients in a crock pot:
1 pound of ground beef or shredded chicken (cooked)
1 can of black beans
12 oz frozen corn
1 can diced tomatoes
1 packet taco seasoning
1 can tomato paste
Pour in chicken broth until the pot is almost full.
Cook on low heat for 6-8 hours.
You can top each bowl with shredded cheese, sour cream, sliced avocado, diced fresh tomatoes and crumbled tortilla chips.

So, you just tear up soft, corn tortillas and toss 'em in? I saw some recipes called for them, but they wanted you to bake them to crumble over the soup.

This one sounds delish...one question. I guess when they say enchilada sauce they mean the red sauce. Have you tried it with green enchilada sauce? I like that better for cooking, but was wondering if it could be used in this soup. I may make this tomorrow!
