Crockpot and Easy Meals "Index post 372"

Made the pork chops, stuffing, and apple pie filling yesterday and it's gone today. Couldn't find the no sugar added pie filling but it turned out fine with what I did use.

I made the crock pot Mac & Cheese; however, I changed to few things and it was perfect!

Crock Pot Mac & Cheese

3 cups milk
3 eggs (beaten)
1/2 stick butter (melted)
4 cups shredded cheddar cheese
16 oz noodles (uncooked)

Whisk together milk, eggs, butter, noodles and 3 cups of cheese.
Cook on low for 3 hours. Add one cup of cheese for top only, then cut off 40 mins later.

Have the Chicken, salsa, beans, corn recipe in the fridge ready to go into the crock pot tomorrow morning before work! Hope it turns out alright....
 
Baked Potato Soup

6 large potatoes, peeled and cut up
1 med. onion, chopped
3 cans chicken broth
1/4 c. butter
2 1/2 tsp. salt
1 1/4 tsp. pepper
1 c. heavy (whipping) cream
1 c. shredded cheese

Put first 6 ingredients in crockpot and cook on high 4 hours or low 8 hours. Mash potatoes (if you wish - I like them chunky). Add last 2 ingredients. Serve.

Definitely not low calorie, but delicious!
We had this tonight and loved it!

When you say "melted butter", do you mean as is, or clarified butter? How many people did it serve? And what size crockpot did you use?

I just melted the butter in the microwave and pour in the bowl with milk and eggs.

I used my old crockpot and I think it's about 6 quarts, the tall size.

Serving size...well it's only the two of us and we ate like pigs and still had a lot left over for today.

I let it cook for 3 hours then added the cheese cook another 45 mins to hour and then turned it off for 30-40 mins and served...it was so good...:worship::worship:

I have a whole chicken and veggies in the crock pot now. Tomorrow will be Lentil soup in the crock pot. :banana:
 
I got this one off of recipezaar about a year ago. I make it all the time. It's super easy-- you don't even have to defrost the chicken!!!


Crockpot Chicken with Black Beans and Cream Cheese:

Ingredients
4-5 boneless chicken breasts

1 (15 1/2 ounce) can black beans


1 (15 ounce) can corn


1 (15 ounce) jar salsa, any kind


1 (8 ounce) package cream cheese

Directions
1)Take 4-5 frozen, yes, frozen, boneless chicken breasts put into crock pot.
2)Add 1 can of black beans, drained, 1 jar of salsa, 1 can of corn drained.
3)Keep in crock pot on high for about 4-5 hours or until chicken is cooked.
4)Add 1 package of cream cheese (just throw it on top!) and let sit for about 1/2 hour.
5)All done and enjoy!

Edited to add: I usually serve it over white rice!

Ty this was awsome we did it in flour burritos and mexian rice and refyed beans, with sweet corn cakes my husband loved it he ate three and then blamed me for the tummy ache lol

ITA! When DH saw it, he couldn't believe it would be any good. But the creaminess from cream cheese and the spices in the salsa were a great combination.
 
Wow - made a really yummy 'stew' tonight. Saw the recipe on the Today show last week and had the ingredients to give it a try. I didn't have exact measurements/quantities, so I just guessed and threw it in the crockpot. Turned out great!

Short ribs (I used a combo of short ribs and stew meat that I had frozen)
chopped onion, celery, carrots
can of diced tomatoes (didn't have these so I used a can of hunt's spaghetti sauce - worked fine)
~1 1/2 cups (? give or take) red wine or a can of guinness
salt/pepper to taste

They seared the meat on TV, I didn't. Just put it in the crockpot, top with salt/pepper, toss the celery/onion/carrots on top, dump tomatoes/sauce over top, pour in the wine/beer. I let it simmer on low for about 5+ hours, until the meat was really tender. The wine gave everything a wonderful taste - it was really so good! And so easy.
 
Okay silly question here. I have a crockpot and a nesco roaster oven. Which appliance do I use?
 
Hi, Just a word of caution for all the fellow crock pot fans- Be careful with "older" models. I used mine the other day to make "Chicken with Apricots and dates" from the 365 Days of Slow Cooking site. (This came out great, by the way-esp if you like fruit in your main course! Served it over cous cous) Anyway, about an hour and a half into cooking on high, I started to smell a weird smell. Luckily I was home. I kept checking out the crock pot and all looked ok. I thought maybe it was the cumin, cinnamon and all the fruit in there. So I let the thing go on for 3 hours total, only to discover later that there was a huge "bubble" on the bottom of the base and one of the legs had started melting and was now crooked! The thing only has 3 legs, so it was destined to fall over soon!!!!! Looks like the heating element got too hot and melted the base!!!!!!! I have left my crock on for hours and left home in the past-Thank got this was not one of those times!

I just got off the phone with Hamilton Beach customer service and they will send me a postage paid box to mail it back and then send me a new, comparable model. They said my model was manufactured 14 years ago! I'm sure I didn't buy it 14 years ago, though. Anyway, she said the old models have heating elements in the bottom, and now they are on the sides. Also, the older models like mine had a plastic base and now they are all metal. I would feel safe leaving the house with it on with a newer model.

Anyway, I just wanted to share what happened and what I learned with my fellow crock potters!
 
thanks for the info...I may need to buy an updated, improved model. Mine is about 12 years old.

Here is a recipe I haven't seen yet. I tried this last month and the whole family loved it.
Slow Cooker Pork Roast
Ingredients
3 to 4 pound pork roast
1 large onion, roughly chopped
1 apple, peeled and roughly chopped
3 cloves garlic
2 cups apple cider
1 1/2 cups water
1 tsp salt
1/4 tsp pepper

Directions
Place all ingredients in crockpot and cook on low for about 7 hours.
