Crockpot and Easy Meals "Index post 372"

also made this Chicken and Dumpling recipe the other day and it was amazing!

Slow Cooker Chicken N Dumplings
3-4 chicken breasts (I use Perdue fit n easy with all fat trimmed off)
1 can cream of chicken soup
1/4 cup onion diced or you can use minced onion (about 2 tbsp)
1 chicken bullion cube
1 and 1/4 cup water
1 large can of homestyle biscuits

Combine everything (except biscuits) into slow cooker and cook on low for 5-6 hours
30 minutes before serving tear biscuit dough into pieces and add to cooker. I usually up the heat to high for the last 30 minutes.
It is absolutely tender and delicious! Almost as good as Cracker Barrel.

I made this last night and it was delicious and SO easy. I posted it on my facebook status. Thanks for sharing it!
 
my husband is lactose intolerant so I can not use any "Cream Of ____" whatever soups (mushroom, chicken, etc) do any of you know of a dairy free alternative I can use for these recipes? so many of them sound so good but I can't make them due to the soup they call for! If anyone can help that would be greatly appreciated!

How bad is your husband's LI? I'm also LI and Lactaid works for me. I made this two weeks ago and it was awesome! I took Lactaid about 20 minutes before we sat down for dinner and had no problems...

Add 1/2 hour to cook time, use plain chicken broth in place of soup or beef broth if it is a beef recipe. Near the end of cooking take out a little of the liquid and combine with cornstarch. Add cornstarch mixture to another cup of the liquid then add back into the crockpot and stir. Cook the last 1/2 hour with the crockpot lid partially off to release steam.

thank you so much for the info! it's greatly appreciated. My husband is VERY LI, to the point where lactaid pills do not work for him. it's really really bad. I have to make sure everything is dairy free, including breads/taco seasonings/stew seasonings, etc. It's hard but we make it work. he can eat cabot cheese, as that is Lactose Free!! which makes cooking MUCH easier...before I knew that we were using veggie shred and that was just horrible. thanks again, I'll try the above!!

Just a word of warning, though...you want to mix cornstarch with COLD liquids rather than hot. If you try to mix cornstartch with hot liquids, the cornstarch will clump and not thicken like it's supposed to. Don't ask how I know... ;)

I think I might try this variation myself! I can season to my heart's content... :love:
 
Tonight-
drunken dawgs(Amy's chicken sausages or hot dogs in the crockpot with 1 bottleBBQ, a beer, and a sliced onion), pasta salad and green beans.
 
This isn't a crockpot recipe, but is easy and quick...and cheap. This serves a family of four, with second helpings. Make some mashed potatoes, homemade or instant, you choose. Brown two pounds of hamburger (season to taste). When meat is browned, in a coffee cup, mix 3 teaspoons of flour and 1/2 mug of water to make a watery paste. You may have to do this 2 or 3 times in the mug. Pour each mug-full over the hamburger and stir. Put a nice helping of mashed potatoes on each plate and scoop some of the hamburger mixture right on top of the potatoes. We usually have a vegetable on the side. That's it!

We call this Hamburger Gravy.

I'm confused. Does the beer go in the crockpot, or the cook?

Seriously, though - any variety of chicken sausage, or does Amy's only make one (not that it's actually going to matter, I'll probably end up using hot dogs ;))?

I used 4 frozen chicken breast, it was soupy that's why I want to add some carrots for next time. It was GREAT!
 
I made the pork chop/stove top last weekend and my family loved it as did I. I serve it with cranberry sause on the side, the chops fell off the bone. Soo Good. :woohoo:

I think my chops were too thin and boneless, that could be my problem.

Tater Tot Casserole
1 1/2 - 2 pounds hamburger
1 Family Size Can Cream of Mushroom soup
1 Bag tater tots
1 8oz bag Colby Jack Shredded Cheese

Cook Hamburger with salt and pepper until done breaking it up as it cooks.
Drain Well.
Mix meat with Cream of Mushroom Soup warm slightly.
Spread into bottom of 9x13 cake pan.
Place tater tots on top of above mixture. (laying them neatly out to form rows).
Cook 35-40 min at 350 deg.
Spinkle cheese on top (I use about 3/4 of the bag) and place back in oven till cheese is melted.

Let set 10min before serving.

I used really cheap beer and wouldn't be tempted to drink the stuff. :lmao:

Any kind. I just get Amy's cheap at Costco and they are better if you're on WW.
 
Pasta Fagioli Soup (like Olive Garden)

1 lb lean ground beef (browned & drained)
1 T dried Onion flakes
2 celery ribs, diced
2 carrots, diced
1 can kidney beans, rinsed & drained
2 cans tomato sauce
3 cans water (used tomato sauce cans)
1 can diced tomatoes, undrained
1 T parsley flakes
2 t beef bouillon granules
1/2 t oregano
1/2 t basil
salt & pepper
4 servings of pasta, cooked.

Combine everything but the pasta in the crock pot, cook all day. Either add the pasta at the end or put it in the bowls & ladle soup over.
Very similar to Olive Gardens.
 
I think my chops were too thin and boneless, that could be my problem.

OVerall we liked the recipe, but I only used one can of mushroom soup, and should have used two. Pork got a bit dried out.
 
Am trying chicken and corn today - and trying out the liners for the first time. I may have my crockpot too full...we'll see. I have chicken legs and thighs covered in a seasoned coating sitting on the bottom of my crockpot with corn coblets wrapped in non-stick tinfoil with butter and salt sitting on top of them. Put em all in and turned the pot on high at about 11 this morning. Hopefully that means I will have supper tonight! If this doesn't turn out it could be grilled cheese for supper!
 
Wings-

I used 12 wings- removed the tips and cut in sections (24 pieces). I dusted them with some cajun spice rub, tossed in the crockpot and cooked on low 5 hours. I then took them out, poured off any liquid (froze for stock) and tossed with sauce of choice (I used Sweet Baby Ray's Honey Chipotle BBQ sauce) and cooked in oven on foil-lined pan at 375 degrees for 10 minutes.
Very good. I probably could have cooked in crockpot in 4 hours because a piece or two had the meat falling off the bone. Just depends on our very unpredictable crockpot of choice I guess!

I love the Tater Tot Casserole but I make it with cream of chicken and sharp cheddar cheese. Yummy
