Crockpot and Easy Meals "Index post 372"

My favorite is an old Pampered Chef recipe.

1 Boston Butt Pork Roast (goes on sale for 99cents per pound)
1 cup of BBQ sauce
1 cup of soda pop ( I usually use Dr Pepper or Deit Cherry Coke).

Put all in the crock pot and cook all day (about 8-10 hours) on low.

The meat just falls apart.
 
I got this one off of recipezaar about a year ago. I make it all the time. It's super easy-- you don't even have to defrost the chicken!!!


Crockpot Chicken with Black Beans and Cream Cheese:

Ingredients
4-5 boneless chicken breasts
1 (15 1/2 ounce) can black beans
1 (15 ounce) can corn
1 (15 ounce) jar salsa, any kind
1 (8 ounce) package cream cheese

Directions
1)Take 4-5 frozen, yes, frozen, boneless chicken breasts put into crock pot.
2)Add 1 can of black beans, drained, 1 jar of salsa, 1 can of corn drained.
3)Keep in crock pot on high for about 4-5 hours or until chicken is cooked.
4)Add 1 package of cream cheese (just throw it on top!) and let sit for about 1/2 hour.
5)All done and enjoy!

Edited to add: I usually serve it over white rice!


I make this all the time. I serve it several ways. We serve it with chips for a "snacky" sort of meal on Friday family movie nights. I also put it in whole wheat tortillas and cover with enchilada sauce and a bit of shredded cheese and bake. We also use it for taco sundaes. The rice is the ice cream, the chicken mixture is the sauce, diced tomatoes for cherries, sour cream for whipped cream, crushed tortilla chips for nuts, and lettuce for coconut. It's another fun meal!
 
My husband and I have each noticed a sort of "chemical" taste when I use the slow cooker. I have tried with and without the liners. Any ideas or anyone else who has dealt with this?

i cannot wait to make the chicken breasts w/salsa et al... my kids will love it and dh too! and it couldn't be easier... just cut up some lettuce and buy a bag of cheese and voila, chicken burritos!

i will probably buy the (cheaper) frozen chicken breasts from walmart, which makes it a thrifty meal too! :)
 
I made this one this week:

Crockpot turkey breast

1 turkey breast (4-6#'s)
1 stick of butter
2 cups of white wine or chicken broth (I used one of the little plastic bottles of
wine with the screw off top and also 1 can of broth)
1 onion, coarsely chopped
salt and pepper

Sprinkle the breast liberally with salt and pepper. Place into the crock pot. Insert the stick of butter into the cavity. Place onion along the sides of the breast. Pour wine/broth over top. Cook on high for 6 hours.

Question from the terrible cooks row.... is that a stick of real butter (salted or not salted) or a stick of margarine?

Chicken Marsala


4 or 5 frozen chicken breasts(I use the individually wrapped ones from BJ's)

1/2 onion chpped

1 can of cream of mushroom soup

1 soup can of marsala wine

salt

pepper

garlic powder

sliced mushrooms




Place chicken in crock and add soup, wine and onions, s+p and garlic


Cook on low for 6 hours adding the fresh mushrooms in the last 2 hours. I serve with whire rice or noodles

OMG....as i was reading these recipe's i was thinking although sounding yummy....still the same old crock pot stuff. Then i was thinking how much i love chicken marsala and if only it was easier to make. You have answered my prayers:woohoo: I cannot wait to try this. Can you give me a ball park figure of how much salt to put in???

My dh used to complain that everything I cooked in my old slow cooker had a funny taste to it. Two years ago, I bought a new, larger slow cooker and dh and I both agree that food that is cooked in it tastes much better. (I never use the liners). I don't know what the difference is between the two, besides size (the old one is round and the new one is oval) and brand (old one is Rival).
 
I've never tried to bake sweet potatoes or corn on the cob in the crock, but it sounds interesting. I am going to make some of these next week.

We love baked potatoes but in the warmer months I don't like to heat up the house. I bake my potatoes in the crockpot all the time. It was also nice for Christmas dinner to make them that way to free up oven space. Too bad our dinner guests were nearly an hour late. The "taters" were WAY too done.
 
I've tried several recipes (none from here yet) and we never like them. Either they have no flavor or the meat is too dry or its just blah? What am I doing wrong?
Also are you supposed to stir things at all or do just let it go til the end? I'm going to try one from the 365 blog since I had bought the ingredients for it last week before I found this thread. Wish me luck! Next week I'm going to try one on here. I keep trying, hoping I will find out what I am doing wrong or if I have just tried bad recipes before!

How long are you supposed to cook them? On high? Do you wrap them in foil?

Let it go until the end. DON'T open the crockpot during cooking unless the recipe specifically states it. You let out the relatively low heat and risk having your food not 'done' by the time the recipe indicates.
 
I originally got this one from www.allrecipes.com, but modified it. It is the easiest recipe I've ever made and everyone who tastes it loves it!

Slow Cooker Buffalo Chicken

2 lbs boneless, skinless chicken breast
1 bottle buffalo wing or hot sauce ( I use either Red Hot or Steve and Edy's)
1 packet Hidden Valley Ranch Salad Dressing mix

Place chicken breast in crock pot, sprinkle dressing mix over chicken and pour wing sauce on top.

Cook 6 - 8 hours for frozen chicken breasts or 4-6 hours for fresh chicken breasts.

Shred chicken with two forks when finished and serve on rolls.

I also use this same recipe from allrecipes.com. My family loves it!!
 
I haven't read them all, so this one is probably already here - but here goes, anyway...

Sirloin Tip Roast
1 package Lipton Onion Soup Mix
1 can condensed cream of mushroom soup
1 can condensed cream of celery soup

Place roast in first, sprinkle with soup mix, cover with condensed soup (no water). Cook on low all day (or night).

Makes a great gravy to put over rice or bread.
