ON the cutting groceries thread it was mentioned about crockpot recipes.. I have tons, and I am collecting more.. I try to do at least one if not two a week.. trying to bump it up to three or four, but I am not there yet!

Here's one, that I just tried the other day, inexpensive and nice. Although my DH said it wasn't hot enough.. to understand my "iron mouth" DH, it has to be very very hot.. (Habeneros aren't hot enough for him... ) Fire Salsa is like ketchup to him. But for the "tamer" mouths, it was fine..

Smoky Tex Mex Stew

From the Woman's Day site


Serves: 6
Prep: 5 min
Cook: (low) 8-10 hr, (high) 4-5 hr



1 1/2 lb lean beef chunks for stew
1 cup each bottled salsa and barbecue sauce
1 pkt (1.25 oz) reduced-sodium taco seasoning mix
2 cups frozen corn kernels
1 can each (both about 15 oz) chickpeas and black beans, rinsed
1/2 cup chopped fresh cilantro

Note:
Drained canned corn can be used in place of frozen.

1. Mix all ingredients except beans and cilantro in a 3-qt or larger slow-cooker. Cover and cook on high 4 to 5 hours or on low 8 to 10 hours until beef is very tender.

2. Stir in beans and cilantro. Cover; let stand 5 minutes for beans to heat through.

Crock pot recipes??? Who wants them??? MEMEMEMEMEMEME!!! I just got a new crockpot today for my birthday and now I'm dying to use it. And yes, it is something that I really wanted!!!
 
I'd love more ideas for the crock pot! Also, look on the WISH thread where I think there will be a post looking for lite crock pot receipes later this week.

I have another cool one Indonesian Peanut Chicken, its got wonderful smells (almost like INdian food) Anyone interested in that one? I also have a Chocolate Pudding Upside Down Cake (yes, you make it in the crockpot)

Please share crockpot recipes with me too - It is my fave kitchen toy. :) Hubby loves having dinner made and hot when we get home - he's a hungry guy!
 
French Onion Soup.. YUMMY!

~French Onion Soup~
1 quart beef bouillon or brown stock
2 med. yellow onions, thinly sliced
3 tbsp. butter
1/2 tsp. salt
1 tbsp sugar
2 tbsp flour
1/4 cup dry vermouth or cognac (optional)
1 cup grated Parmesan cheese

Pour stock into crockpot. Cook onionc slowly in butter (about 15 minutes) in large covered skillet, stirring occasionally. Uncover and add salt, sugar, flour and vermouth. Stir well. Add to stock in crockpot. Cover and cook on low 6-8 hours or high for 3 hours. Before serving, top with cheese.
 
Upside Down Chocolate Pudding Cake~ very very good!
1 cup Bisquick
1 cup sugar
1/3 c. and 3 tbsp. unsweetened cocoa
1/2 cup milk
1 tsp. vanilla
1-2/3 c. hot tap water

Mix Bisquick, 1/2 cp sugar, 3 tbsp. cocoa, milk and vanilla. Spoon batter evenly into lightly greased crockpot. Mix remaining sugar, cocoa, and hot tap water. Pour over the batter that is already in the crockpot. Cook on high 2-1/2 hours or until batter no longer looks shiny on top. **NOTE: This literally ends up looking like a cake from the top, but surprise! When you slice (scoop) the cake, there is a layer of pudding underneath it. When finished, it looks nothing like what you put in the crockpot in the first place. This is a very rich dessert, so eat a small portion!
 
ONe more this will be it for me.. Forewarned I have heard RAVES about this recipe, but I haven't tried it yet..

Creamy Italian Chicken

4 boneless chicken breast halves
1 envelope Italian salad dressing mix
1/2 cup water
1 pkg. (8oz) cream cheese, softened
1 can condensed cream of chicken soup, undiluted
1 can (4oz) mushroom stems and pieces, drained

Place chicken in bottom of crockpot. Combine salad dressing mix and water; pour over chicken. cover and cook on low for 3 hours. In a small mixing bowl, beat cream cheese and soup until blended. Stire in mushrooms. Pour over chicken. Cook one hour longer, or until chicken juices run clear. Serve over rice or pasta.
 
I use my crockpot at east twice a week! I love it!! I have the great big 6 quart one and I dontknow how I lived without it! lol

Here are a couple of my favourites...

This recipe changes all the time but the basics are

Crock Pot Beef Stroganoff

2 cans cream of something soup,
1 packet onion soup mix,
2 cups (+/- ) water
stir this into the crock pot then add about 1 pound of stew meat. If its too thick add more water , too thin, add a little flour mixed with cold water. Cook 6-8 hours on low or 4-5 hours on high. Serve over wide egg noodles or whatever you want.


I also make a roast that is wonderful in the crockpot.

simply brown a roast in oil, add to crock pot, cover with beef broth ( about 4 cups depending on size of roast) cook on low for 7 hours or high 5 hours. In the last hour of cooking add vegetables ( Potatoes and carrots ) and simmer until tender.


If you have leftovers from the roast , shred the beef and add 1 bottle of BBQ sauce simmer on low for 4 hours then serve over hambuger buns beats Lloyds anyday! ;)
 
binny that roast sounds good, but I'm not a heavy meat fan... I'm more of a poultry person.

I'd have to agree with you about LLoyds barbq.. not worth $7 in my book.
 
OH, YES, please!!!!

As a busy mom of two school age kids who works full time, I LOVE to throw stuff into the crock pot, and have a nice, hot, nutritious meal when we all get home at night!!

Right now I do Beef Stew and Pot Roast, but would LOVE to add some variety to my menus!!

Well then how about SOme Chicken Enchiladas? lol

Not my recipe but a friends'


l lb. sliced chicken breast or ground beef
1 small onion, chopped
6 tortillas
1 can enchilada sauce
1 can cream of chicken soup
1 lb. sharp cheddar cheese, grated
1 can corn, drained
1 small can sliced olives

Cook ground beef and onion together and drain off the fat. Stir together enchilada sauce and cream of chicken soup. Cut tortillas in half. Place some sauce in the bottom of your crockpot. Layer 2 tortillas side by side (if you have an oval crockpot like mine, this will work good. Otherwise, if it is a round one, you can just make one stack ). Spread out half of the beef, top with half of the corn, pour sauce on to cover and then sprinkle with one third of the cheese. Do another layer the same way then top with the rest of the tortillas, cover with sauce and sprinkle with the rest of the cheese. Cook about 4 hours on low. Slice into wedges
 
binny _ I tried making something similiar to the enchilada.. and it was too cheesy for me..
My DH liked it, but it wasn't what I was looking for. (I dont like lots of cheese.. it sort of gets too gooey for me)

Deb.. ok, you now have about 5 to get you started, what day would you like it? Beginning middle or end of the week?

CROCK POT POTATO SOUP

5-6 potatoes, peeled and diced
1 onion, chopped
1 lg. carrot, sliced
1 lg. stalk celery, sliced
4 chicken bouillon cubes
1 tbs. parsley flakes
5 c. water
1 tbs. salt (less if desired)
Pepper
1/4-1/3 c. butter
1 (13 oz.) can evaporated milk

Put all ingredients in except evaporated milk in crock pot. Cook on HIGH for about 6 hours or until potatoes are tender. Check every couple of hours. During last hour turn down to LOW add milk. Leave on LOW or turn OFF until ready to serve. Use skim milk evaporated milk and Mazola oil for low fat diet.

I usually freeze this and pull it out as I need it. I also use canned corn sometimes in the recipe and use left over veggies in it...it is very versatile.....it's a nice base for anything chicken, fish, etc......
 
I tried that potato recipe and the potatoes turned blackish gray... don't know what I did.. Now I know to add some cream of tartar... just in case...
 
I'm getting writters cramp from writting all these down! Thanks everyone, these are great! Keep 'em coming... and any day of the week for a weekly crock-pot thread is fine with me! Great idea!
