Fill up rest of afternoon w/additional fastpasses. We are a group of 9, I imagine we'll have to split up our fastpass numbers to find availability.

Tour Star Wars section & do meet & great

Catch the 2:00 Beauty and the Beast show

Fill in rest of afternoon with shows, rides till Star Wars fireworks

10:00 Safari FP
11:00 Na'vi River FP
12:30 Rainforest ADR

Fill in afternoon w/Lion King, trails

Wed 7/5 EPCOT
Rope Drop:

Journey to Imagination
10:30 Spaceship Earth FP

Counter service lunch

Fill up afternoon with character meet and greet and visiting countries, maybe Test Track single rider

My only thought is that it is a holiday weekend, expect crazy crowds. Go with the flow, otherwise you'll be disappointed it your plan doesn't work out.
 
Personally, I'd take a break from rope drop at least once during the trip, probably the day after you enjoy the HS fireworks. It's really hard to stay up late, then rope drop the next morning. To really enjoy the parks, you need to be rested. Animal Kingdom is the most forgiving park in terms of crowds (except Pandora), so I'd personally be okay with arriving there at 10am for my first FP+. Even on the 4th of July, I'd rather do that than burn the candle at both ends.
 

My 2 cents..

For 7/2
Given that you're visting during a crazy busy week, your pre-FP plans may be tight, which you've already noted for "check" time at Haunted Mansion. This is normally an easier one to get (not sure about availability during this particular week though) an additional FP on later in the day so you could always defer it.
You'll have time between your 7DMT and SM fastpasses and a good time to put in a low line attraction like Peoplemover (one of my faves).

7/3 looks pretty good to me. You may end up a bit early for Beauty and the Beast, depending on how backed up or not 50PTC is, but you can always just take your time and enjoy the atmosphere if it is early.

7/4
I highly recommend the Lion King Show, if you can fit that into your afternoon plans, it is well worth the time.

7/2 - Haunted House is a far distance away just for 1 ride and then to come all the way back rest.

7/3 - No Flight of Passage? if no FP I would RD it

7/4 - No Test Track? Journey isnt something I would worry about in the morning hit rides with longer waits instead
