The one thing I, personally, would drop is San Angel Inn on Thursday. There are extra food booths set up for Festival of the Holidays and I like to try food from those instead of doing traditional sit down meals on my Epcot day.

Yeah, that's true. We have been visiting WDW nearly twice a year for the past decade and have STILL not dined in Mexico so I thought maybe this would be the right time. However, I don't predict being terribly hungry at 4:00 if we are eating breakfast at Ale and Compass at 10:00 and snacking a bit around the world.

I would skip breakfast at the Wave on Saturday. It will just get in the way of your MK agenda.

It's Saturday, so perhaps a nice dinner somewhere instead. Or move it to Monday if you want to go there.

It pays to travel off peak. Your rental car alone is around $800 for the week between Christmas and New Years!

I can only imagine the higher airfare and hotel.:crazy2:

Sounds like a great trip planned.
I'd keep San Angel. One of our favorites.
Great airfare prices if you can minimize luggage fees.
Looks like it's going to be cold. Plan accordingly.
Enjoy!

Seems a bit high to me for the rental car based on my past experience. I suppose it depends on what class of car you are renting. My last tripped I skipped the rental car and just used uber. It was cheaper and more convenient. Have you accounted for the parking fees at the resort and parks?

1st - airfare - WOW! Amazing.

Your plan looks good and as others have said you may want to cancel San Angel ( we enjoyed our food, but with your itinerary it's a lot of food in a short period of time. )

The only other thing I want to point off is you Amazon meet time. IF you plan lands at 341p as posted keep in mind that it's typically 10 minutes to deplane ( now 351p ), if you stop at the restroom figure another 5 ( now 356p ), pick up luggage, if any ( another 10 minutes-ish - now 406p. With the car pre-registered and walk to car, another 5ish minutes ( now 411p ) and drive to resort, 35 minutes you are now at 444p. It's close. It's do-able but close.

I wouldn't do the 8:40 Trattoria breakfast because if you don't you can likely get into the Studios almost an hour before posted opening time and knock out at least MMR and Falcon.

I’d be tempted to keep San Angel... that line to get into the Mexican pavilion has been crazy long. This way you’ll get in quickly. I do love the atmosphere at San Angel too.
