Critique my tenative plans for 1st timers with 5yr old son please!

So far my plan for our Feb 27 - March 5th plan is as follows. Staying at Pop with regular dining plan. We will be driving and using our car mostly except to MK.

Saturday, arrival day (1-2pm)...check in, relax, then dinner at Whispering Canyon 6pm.
Sunday: Prepark breakfast at CP and whole day at MK or until DS says otherwise. =)
Monday: No rush start to Epcot, no ADR's planned, just an easy day to see what we see.
Tuesday: Prepark breakfast at Tusker House and whole day at AK.
Wednesday: NO parks, pool day, relax and dinner at HDD Revue!
Thursday: Breakfast at Chef Mickeys and rest of the day at MK, afternoon break & back for fireworks.
Friday: No rush start to HS, lunch at Mama Melrose w/ Fantasmic package.
Saturday & Sunday: check out & spend time with friends in Orlando until the sad drove home to Alabama on Monday.

That looks good! You are arriving the day we leave. :) We'll have a 2 and 4 year old with us, and our plan looks similar to yours, especially not rushing. We have a couple of breakfast ADRs, but I want my kids to sleep until they wake on their own in the mornings so that they'll be rested for park time.
 
We did a trip when DS was 5 and it was a magical time! It was our first time without a stroller though many many 5's do need them. We are huge on rope drop and DS did better with at least a few days of a mid-day break and we would return to a different park later in the day. On arrival day, we always do Epcot. It cost very little to add that day on and without seeing MK first, our boys really enjoyed a few hours at WS and Epcot. He loved the character meals so you are spot on there. Do remember that pre-park breakfast however is going to put you either rushing to finish for park opening or being a bit behind the first rush of crowds. With a five year old, we would go hard that first hour when lines are not there and then slow down the rest of the day. We also never do an off day. Our boys really wanted to be in the park, not the pool so just did not work for us. It will be such a special trip with a 5 year old.....enjoy.

Looks good except with a 5 year old I would consider fantasmic package lunch at Hollywood and vine for the Disney jr characters instead of mama Melrose.

After 3 character meals, I thought MM would be a nice change up for us parents, plus Italian is all of our favorites. I've been seeing some posts though about no ADR availability after mid December for MM, hoping it won't be closed....but if so H&V it is. ☺

If he goes hard and burns out early Sunday, we probably will go back in the evening, depending on park hours. I'd love too see the Electrical Light parade, havent seen it in 30+ yrs. I do plan for us to walk to AOA for pics & lunch on Weds, as I fear the pools will be short lived in Feb, and I don't want to risk DS catching a cold.
 
Last time I felt like it was hard to schedule a table service meal at DHS because of the show times. Maybe we should do one this time? We spent 30 minutes waiting for Woody and Buzz, which isn't too bad I guess, but I did feel like we were burning daylight. It's hard for me to plan that park.
 
Oh yes, lol, will definitely utilize FP, which leads me to a question....if we use our 3 at MK, would we be able to get a 4th for the parade or wishes?

You can try, it's via the kiosks in the parks and it depends on if they ran out yet. My experience, if your fast passes are earlier and your willing to take a night fastpass without others inbetween your usually safe.

Our only must do at HS will be Toy Story, a TS meal and Fantasmic....that's as far as my planning for that park goes. I'm trying not to overplan, lol.

I'm think we will use our 3 FP+ for say 10, 11 & 12 - eat, then hit the kiosk on our way out for a break (if its needed). Maybe we will get lucky and score one for either the parade of wishes.
 
I'm having the same trouble with DHS. I've decided to just go with the flow and fit in as much as we can.

Our MK days are the only days I really want to accomplish ALOT as far as rides go, we are going to take a laid back approach to the rest of the week, except for the ADR's.
