Critique my ADRs!

Ok, here is what I have booked so far. We're staying at POR, so I want to take advantage of the boat to DD. We'll be visiting in January, and it will be DH and I and our 4 y/o and 9 m/o sons. Local friends are going to join us for the last two nights at the resort, with their 4 y/o. We have the DxDP, friends will be paying OOP,

Sunday (1/3)
Arrive, check in, relax - and we'll be driving from St. Pete so no worry about flight arrival
Head to Epcot for 8:15 reservations at La Hacienda de San Angel, hopefully with a view of Illuminations

Monday - HS
QS breakfast at hotel
HBD 1:30
Jiko 7:20 (might switch to Morimoto once ADRs avail, if reviews are good)

Tuesday - MK
QS breakfast
Crystal Palace 12:45
Nap
Fulton's 7:10 (would consider Boathouse, Wolfgang Puck)

Weds - Epcot
No ADRs made - I don't know what to do and have two threads asking for help
Considering Akershus breakfast, and many ADRs avail for lunch still (Le Cellier, Biergarten, Marrakesh all sound good) but I think snacking around the world sounds fun too. Not sure if we'll make it until evening in the park - maybe a TS meal at an odd time like 4 pm would be good? Or an early lunch then snack all afternoon? Fallback dinner would be Boatwright's at the resort.
