We are doing 10 days/9 nights with DxDDP this fall.
Just for background- The schedule sounds exhausting but as a group we move slowly and saunter from task to task in a fairly relaxed fashion. DD won't sleep earlier than midnight, we are all always up by 7am and DS won't nap longer than 30 minutes (once, maybe twice a day) just so you don't worry I am going to drive them crazy! DH loves breakfast buffets and we all chronically desire food every 2 hours.
Last trip we found that we basically lived at MK and took breaks to go to waterparks and float down the lazy river. DH likes to walk the world showcase and we want to be sure we visit AK and HS once.

Day 1: Arrival aprox. 11:30 POP, hang out, eat lunch, probably swim at resort or water park for a bit.
5:30 Garden Grill

Day 2: AK day(might use GAD), back to resort after dinner
8:05 Tusker house
Either CS lunch or snack through day
5:45 Boma

Day 3: MK morning and evening(might use GAD pass). Mid afternoon break probably to swim.
8:15 Crystal Palace
12:00 Liberty Tree Tavern
5:45 CRT

Day 4: Whatever day, F! tonight.
snacks or CS breakfast and lunch.
4:40 MaMa Melrose F! package

Day 5: Epcot (with GAD pass), Spirit of Aloha, fireworks if we want
8:15 Akershus
12:00 Marrakesh
5:15 Spirit of Aloha

Day 6: HS day (GAD here if we haven't used one but there is no TSM), Epcot evening
8:00 Hollywood and Vine
12:00 Sci-fi dine in
5:45 Biergarten

Day 7: MK morning, might swim before dinner, Epcot evening
11:30 Crystal Palace
5:20 Le Cellier

Day 8 More MK, might go to swim before dinner.
8:05 Crystal Palace

5:40 Chef Mickey's

Day 9: MK evening.
11:50 Whispering Canyon

Day 10: whatever. Magic Express will probably take us around 5:30

We have 23 of 27 credits scheduled and we will have 7 meals that will either be CS, snacks or an OOP... probably going to eat breakfast with snacks three times and we will be set.

We will actually eat three meals every day, we just do. The snack credits will mostly be cold drinks because of heat.

Part of me keeps going "wow, that's so much scheduled" But it's sandwiched around where we already are and we found that we do buffets fast so the CS we went to sometimes took even longer than some of our TS. We aren't super worried about meeting every character, we just want our own space to sit at the table and breath for an hour in the A/C. We ask for the buffet check when we get drinks and pick from menus early so that it gets taken care of at the beginning and sometimes from check in to departure is 45 minutes.:cool1:
 
It is certainly your choice, and you know your family best, but that looks overwhelming to me. I would try to space out the ADRs more, especially on the days when you have 3 TS scheduled. Days 3, 5, 6 and 8 in particular look like way too much eating, and way too much time in restaurants. I would definitely try spacing the meals out more (could you have lunch closer to 1 or 2, and dinner closer to, say 8? I'd definitely do the later Spirit of Aloha, if you don't really care too much about bedtime).

Personally, if it were my family, we would use some of our snack credits for quick on-the-go type breakfasts, like muffins or yogurt parfaits, and use TS credits for early-ish lunches and then try some signature places, like California Grill or Flying Fish at dinnertime. Again, it's YOUR vacation!

I certain do plan to do a review... I felt sort of silly last year about not doing one after I realized how much we ate.

I'm sort of afraid of the signature places because I know they will take longer... My thinking is if I know we are going to eat breakfast, lunch and dinner- why should I allow one of them to take up 1.5-2 hours plus the transportation? That seems like it would take more time than a 1 credit buffet in the park we are already at.
I've sort of been thinking of cancelling our Le Cellier (gasp!) and doing Biergarten that night since I'm afraid of the time Le Cellier will occupy. That clears up day 6 a bit too.
The other one I feel really on the fence about is Marrakesh. I know we will love the food, but is it worth our time? I wish I knew what DS's temperment would be like 4 months from now.
