Crispy oven chicken recipe

I just mix some Bisquick and breadcrumbs, add seasoned salt and lots of pepper, rinse the chicken in water and shake it in the coating mix and bake in a hot oven until done. I spray the pan with PAM and also spray the top of the chicken before putting it in the oven.

I have also used crunched up rice crispies at times.
 

I just use breadcrumbs-either regular or panko and I like to add extra seasonings(paprika,garlic or parm cheese)then dip the chicken cutlet or boneless breast in egg or egg white if going healthy,then breadcrumb.Spray baking sheet with pam and bake at 400 for 20-40 min depending on thickness.I spray the top with pam too.I also do double dipped chicken cutlets this way-dip in breadcrumb first,then egg,then breadcrumb again and bake the same.We eat them with franks buffulo wing hot sauce drizzled on top and I like to dip in ranch dressing.I had to find a healthy alternative to fried cutlets for the family because my dh has been eating healthhy and losing wait for the last year(he lost 125 pds)and everyone loves these and they are really easy.
 
I mix up some crushed Kelloggs corn flakes (the non frosted kind) little salt, pepper, poltery seasoning. Then I dip my chicken in egg mixture. (couple of eggs and a little milk) Then shake the chicken in the cornflakes. It really comes out crunchy. Pop them in a 350 degree oven and once your juices run clear...DONE!! :banana: My Kids like it when I make chicken strips. But you need to cut your strips a little bit bigger than usual. Baked Chicken Supreme
Ingredients
4 cups Ready-To-Eat Cereal Rice Krispies®
1 tsp paprika
1 egg
3/4 cup milk
3/4 cup all-purpose flour
1 1/2 tsp salt
1/4 tsp pepper
1 tsp poultry seasoning
3 lbs chicken pieces, washed and patted dry
3 Tbs margarine or butter, melted
Directions
1. Place KELLOGG'S RICE KRISPIES cereal in shallow dish or pan. Stir in paprika. Set aside.
2. In medium mixing bowl, beat egg and milk slightly. Add flour, salt, pepper and poultry seasoning. Mix until smooth. Dip chicken in batter. Coat with cereal. Place in single layer, skin side up in shallow baking pan coated with cooking spray or foil lined. Drizzle with melted margarine.
3. Bake at 350° F about 1 hour or until chicken is tender, no longer pink and juices run clear. Do not cover pan or turn chicken while baking. Serve hot.
 
Dip skinless and boneless chicken breast in sour cream and coat in crushed ritz crackers, Bake @ 350 for 45-60 min.............Yum
 
Forgot where this came from but it is excellent.

Brown Panko Bread Crumbs in a small amount of olive oil in a frying pan. Takes about 5-7 minutes.

Cool and add some grated Parmesan cheese, and any other seasonings you may like.

Dip cutlets in seasoned flour, then egg whites, then cost in bread crumbs. Put on a wire rack on a cookie sheet, spray with baking spray, bake at 450 for about 15 minutes.
 
Mine is simple and was "passed down" from my mom (not that its any kind of secret recipe-LOL)

I season the chicken pieces with salt, pepper, and a little bit of McCormick Rotisserie spice
Dip in a little melted margine or butter
Dip in crushed Rice Krispies (I actually buy a box, run through the blender, and keep in a sealed bowl)
Bake at 375 for 35-45 mins (depending on sizes/quantity of pieces)
 
simple oven fried chicken

chicken parts with bone
flour
salt and pepper
paprika
chili powder (to taste)
garlic powder (to taste)

Blend dry ingredients. Wash chicken and pat dry. coat with mixture.

Heat about a 1/4 inch of canola (or cooking oil...not olive) in the oven at 400. I use a roasting pan. Make sure oil is hot when you put the chicken in. Let it fry for 1/2 hour flip and fry for another 1/2 hour. It will be crispy and delish!
 
One time I was out of anytype of bread crumbs and cereal and found my new favorite recipe for baked chicken.

I usually use chicken breast and cut them into stripe size pieces.

Coating Mixture:
Corn Meal- yellow or white
A couple tablespoons of flour
Paprika- Gives the look of fried chicken- nice color
Spices- Whateve you want. I always at least add onion, garlic powders and salt and pepper.

Wet Mixture- Will use milk or left over egg yolks or whites- depending what I have- they all work good!

Put dry mix in a bag.After you wet it with the Wet Mixture and shake them in the plastic Bag.

Spray Baking sheet- I put them on 475 for 15 mins! This makes them crispy and then lower over to 350 to finish cooking.
The trick to the crispy part is the cornmeal and :banana:to heat up some the olive oil(when the oil is hot it takes less oil to coat chicken) when they are first baking baste with olive oil
The great thing is you do not need barely any oil when it is heated up becuase it thins out. I think for a whole pound of chicken I use less than a 1/4 cup.
