Creamed corn casserole?

I hope it's ok to post this here, I know this board gets more traffic than the cooking board. I am looking for a side dish for Christmas dinner, and I am wondering if anyone has a creamed corn casserole recipe? My MIL makes it with peppers in it, and I don't much care for the peppers. I had some creamed corn spoon bread at Hollywood and Vine and it was fantastic! Can anyone help me out?

I am not good at posting thread links, but there is a recipie on the restaurant board about this dish.

1 can creamed corn
2 eggs beaten
salt and pepper to taste
1 can milk (the corn can)
2 tablespoons sugar
2 tablespoons melted butter
1/2 teaspoons cornstarch

Mix all ingredients together and bake in a casserole dish at 375 degrees until slightly golden on top and pudding is set. (about 30-45 minutes) Really simple and good.
 
This is a corn bake with broccoli that I like. Recipe from two LUtheran cookbooks.

one 15oZ can creamed corn
one l0oz box frozen chopped broccoli cooked and drained (be sure to drain well)
one egg, beaten
1/2 c. cracker crumbs

one tbl chpped
onion
1 tbl margarine or butter
1/2 tsp salt
1/8 tsp pepper

Mix all ingredients. Bake uncovered in casserole for 35 min at 350. I usually double recipe. Serves 6.
 
Here's the recipe I use. It's really easy and very good.

Baked Corn

INGREDIENTS:
1 (15.25 ounce) can whole
kernel corn, drained
1 (14.75 ounce) can cream-
style corn
1 (8 ounce) container sour cream
1 cup melted butter
2 eggs, beaten
1 (8.5 ounce) package dry corn
muffin mix

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Combine the whole-kernel corn, cream-style corn, sour cream, melted butter or margarine, eggs and corn muffin mix. Mix well and pour into one 9x13 inch baking pan.
3. Bake for 35 to 45 minutes.
 
I hate creamed corn....the very thought of a creamed corn casserole is :crazy2: :scared: :eek: :crazy2:

What kind of texture is it?

This is pretty much the recipe I use, except I add 1 cup of shredded extra sharp cheddar on top for the last ten minutes. We call it corn spoon bread, and it's always a big hit when I make it.

I hate creamed corn too!! And when I heard of this sort of casserole I thought there's nothing more disgusting, but I still made one for Thanksgiving and it was actually good. More like a cornbread. This is the recipe I used. Try it.
INGREDIENTS:
1/2 cup butter, melted
2 eggs, beaten
1 (8.5 ounce) package dry corn bread mix
1 (15 ounce) can whole kernel corn, drained
1 (14.75 ounce) can creamed corn
1 cup sour cream

Preheat oven to 350 degrees F (175 degrees C), and lightly grease a 9x9 inch baking dish.
In a medium bowl, combine butter, eggs, corn bread mix, whole and creamed corn and sour cream. Spoon mixture into prepared dish.
Bake for 45 minutes in the preheated oven, or until the top is golden brown.
 
instead of sour cream I use onion dip. (The kind you get in the refrig section near the sour cream.) Gives it a little more flavor. My kids love it...so does my husband. If you ever had the corn cake at ChiChi's, it kind of tastes like that.

So it comes out like bread? Not like a mushy casserole? Maybe I will try it after all. :)

Very, very moist bread. Almost a bread pudding/stuffing consistency.
 
The recipe that I posted above comes out in a custard consistency.
