For most, one semester. However there are varying lengths:
Fall
Fall- approximately mid-August until early January
Fall Advantage- approximately Mid/Late May until early January
Fall Advantage Quarter- approximately June until early January (only available to students attending schools on the Quarter/Trimester Academic Calendar)
Culinary- on going
Spring
Spring- approximately early January until mid-May
Spring Advantage- approximately January until mid-August
Spring Advantage Quarter- approximately March until mid-August (only available to students attending schools on the Quarter/Trimester Academic Calendar)

So...if I do a Spring program...and go Jan-May then extend it to Fall Advantage (Late May-Jan) or Fall Quarter (June-Jan)...what do I do with that time off between programs? Do they let you have that time off...or do they just extend you working?

The extension process actually directly ports your departure date to the next "set" of departure dates. If you do a normal Spring term, you could apply to be extended to August, and then in August you could apply extend again into January.
Unfortunately there is no time-off between programs. Participants will immediately continue work into their new departure date.
