Couples Weekend Ideas?

I am planning a trip for my DH and I for 3 nights in February. We go to WDW often- we will be there in November, December, and April next year with my parents and family so we don't have to fit in the "must sees" at the parks. What would be some things you would want to make sure you did on a couples weekend? I'm thinking places for nice dinners, spa, special activities, etc.

I think Ale & Compass, Morimoto & California Grill are all nice dinner options on a couples trip.
I would suggest trying to do the opposite of what you normally do on family trips to make it unique. Ex: if you normally rise early to get to the parks ASAP instead try a slower morning, maybe go for breakfast & then start your day. Or if you are back to the resort early on your family trips to use the pool, etc try staying up late until park closing.
 
In my opinion, the Boardwalk at night is the most romantic place at WDW. The Italian restaurant there, Trattoria al Forno, has nice atmosphere. And you can go for ice cream afterwards. (◍•ᴗ•◍)
 
Here are some ideas:

1) Dinner at Victoria & Albert's
2) Dinner at Monsieur Paul
3) Go horseback riding (before they break down Double D Ranch)
4) Take a backstage tour (or two)
5) Enjoy a spa treatment / special

These are things we have done and greatly enjoyed doing.
 

I like the special lounges where you can have a drink and maybe some unusual food ... places like Nomad Lounge, Abracadabar, Ale and Compass Lounge, the high top tables outside of Brown Derby, the outside bar at the Poly, Geyser Point, the bar inside Cali Grill, Spice Road, the wine bar in Italy in Epcot, Rose and Crown Pub, the Bellevue Lounge, the one at AK Lodge ... anyway, you get the idea. (sorry I can't remember all the names)
 
Love the boathouse in Springs, amazing food. After/before you eat you can get a drink at the outside bar on the dock. Tip -book your reservation through Open Table instead of Disney directly. No penalty if you dont show up!
 
Shulas steakhouse is also a great place to go for dinner, then you can walk to Epcot through the backway and walk the countries :)
