What hidden gems should I consider for an adult only day?
We do not drink, smoke, go to clubs or like to eat very late.

We have a day with just me and my lady (wife) and I'd like to get the best of our time together.
We will be at a park. I am not big on shopping so Disney Springs is out.

Just being together is enough for me. We honeymooned at WDW and took a trip about a year later for 4 days and loved every minute of it. Now we have kids, and go up to Disneyland (AP holders living in SD) once a month, and probably once every 6 months just the two of us. We love just being able to ride rides together, as we are often rider swapping the big rides.

You get far more accomplished with just two of you and meals will probably be faster as well.

One thing we loved doing that there's no way we could right now with kids is Park Hopping. Looking back at our two trips to WDW sans-kids we noticed we did A LOT of hopping. We were in three different parks most days, just hitting what we liked and then moving on. We had loads of fun.

DH and I like to tour WS at Epcot, especially the exhibits in Morocco & Japan that our kids had no patience for. And the movies in Canada, China & France. We also enjoy Soarin' and the Disney/Pixar films. But what we like the most is just walking along holding hands!

Edited to add - we've taken various backstage tours too. And we're always looking at the details in the architecture and plantings (AK is especially amazing for both).

Speaking of eating late. We did have neat experience once. We had a reservation for Teppan Edo at 8:15 PM one of the days of our trip, and by the time we were done eating the park had closed and was completely empty. It was just us and the other people at our table walking through the park as we left. It was a neat experience.

Some of the things depending upon what you are into:
sports: golf, mini-golf, fishing, marathon, bowling, ESPN Club, WWS/ESPN Zone, etc
shopping: DTD, area outlet malls, large scale malls
movies: DTD 24 screen theater some with meals served by waiters
resort tours: monorail tour of resorts, Boardwalk around the lake tour of resorts, horse drawn tour of FWC, AKL/AKV
offsite: Gaylord Palms Resort, Citywalk, swamp tour

In your case I would do a tour like Keys to the Kingdom or Backstage Magic

I second the suggestion of a tour.

We also like to just slowly wander around the park. Check the daily times guide for the times of various shows and street performances. We also enjoy just finding a bench and watching the world go by. Perhaps while enjoying a Mickey Bar or other treat.

My husband and I are in the same boat, but we love to shop at DS
We like to tour the other resorts, take in all the shows, try something new each trip (our last was The Voyage of the Little Mermaid at HS. We always thought it was cartoon for kids, but found out it is mostly live action with incredible singers. We also took the carriage ride at POR. It was awesome. There are a lot of things to see and do before it gets too late! Have a great time.

My husband & I are just like you folks. When we were planning this year's vacation, we decided we wanted a day to go explore Fort Wilderness & go canoeing, bike riding, etc.. After looking into it some more, we decided to book a Cabin & just stay there for our whole trip
