When do we do the online check in? I can't remember and I don't think I got an email yet. Our cruise is end of January.

Also, how do we know about all of the classes and things we can do on the ship for adults? I always hear about all of these things, but have never done them. I have heard you can go on a tour of the ship, but never seen anything about it. Am I missing something?

You should be able to check in now, my cruise is also in Jan and my check in opened 90 days out which was in October, the navigator has all of the activities for the cruise, you get it when you check in at the terminal and then each night for the following day in your room. If you look at the Disney cruise line blog they have navigators from people who recently have cruised so you can get an idea of what's going on before you go.

First time cruisers can check in starting 75 days before you sail. Silver Castaway Club members get to check in at 90 days.

As the PP mentioned, there are Navigators which tell you all the things going on on the ship for each day. To get an idea of activities from prior cruises, check out disneycruiselineblog.com. That site has tons of Navigators from prior cruises. If you are interested in the mixology and other tasting classes, you sign up for those when you board the ship. The information on where to go will be in the Navigator you get when you check in at the Port.
 
About the tours of the ship, there are several ones. On the first (and maybe also second) day there are tours that show you where everything is on the ship. These are more of an informative nature, to help people find their way around. Then there are several tours about the design and art of the ship. The times for those can be found in the Navigators and they are usually held a few times during the cruise at varying times. You can alway go and ask at guest services about when they will be offered and they appear also in the schedules in the DCL app (once it has loaded the Navigators after you boarded the ship). And then they sometimes offer galley tours and tours of the theater, but these are usually only offered during longer cruises, not on the standard Bahamas and Caribbean cruises. If they are offered, they can be found in the Navigator as well. But you can always inquire about these with guest services as well.
