We will be at DL for:
afternoon/evening of Monday
all day Tues/Weds/Thurs
until lunch'ish Friday (figure better leave by 1p to avoid rush hour... we are driving)

Tues morning is our MM
Thurs morning is our CB

Other than that the things I want to do (other than reg attractions) are:
Fantasmic
Parade
Jedi Training
Alladin
Phineas and Ferb Rockin Rollin...

Places I want to eat.....
Troubadour Tavern (lunch)
Naples (dinner?)
DCA corn dogs (lunch)
Rainforest Cafe (dinner)

I plan on doing bagels w cream cheese and fresh fruit from our hotel for breakfasts other than the Thurs CB.

Also would like to ahve some HOJO pool time built in for my 7yo son..

Any tips on the best way to plan our days to fit the restaurants and shows in without too much backtracking is greatly appreciated

Fantasmic will run twice a night. If you can see the second show, it requires much less waiting, you can just come in after the first show's crowd leaves.

Parade will be easy to catch since you have a few chances.

Jedi Training. You have many options to see this. If you hope to be chosen see the first show on the first day.

Aladdin will have many options to see. This show takes about an hour of waiting and 45 minutes to watch. You can ride ToT, Monsters Inc or go in the Animation Building until it's time to line up.

The Rocking Rollin Party will run often, you can casually show up to watch this when you are in the area.

In general if you want to get those things in, plan to see them, particularily the first three, on your first day. Leaving the other days as back ups or for redos.

Make a reservation for Naples, and RFC catch the others when nearby during lunch time. RFC has to be called directly, Disney Dining does not make reservations for them.
