Counter services choices for breakfast? WHERE TO GO?

We did the dining plan last year and had a full lunch and dinner. We were sooo full. We were thinking about doing the breakfast and a dinner. Where besides the hotel food court can we eat? Can you recommend counter service restaurants in the parks? Thanks
