Counter service "Fast Casual" question

I vaguely remember reading something, somewhere about how certain counter service places now make your food right in front of you rather (stir-fry, sandwichs, etc.) than having it prepackaged or prepared in the back. I think this type of service might have been called "fast casual" and might be a bit more expensive than other counter service places in the parks.

Am I making this up? Or do these places actually exist?

If I'm not making this up, please tell me which counter service restarants fall into this category.

Our sandwiches were made for us specifically at Seasons.
 
Earl of Sandwich and Girardelli's are a couple of other places. We have had a few places where we could see them putting our plates together because plates weren't waiting but I don't think this is what you are looking for.
