Countdown to Summer Vacation Challenge

I have no idea what is for dinner. My fiancé is throwing a bit of a fit lately. We have fallen into a dinner rut (I fully admit that) but he and I are so very different. He will only eat beef and pork and only certain cuts of them (he is not a hot dog or hamburger man, fillet Mignon all the way). As for me, I only eat fish (and lately chicken for lack of anything else)and I must admit I am picky as to what kind of fish (cant get behind salmon for example, but I :love: tilapia) Sides are the same problem, he wont do any type of pasta and he wont do brown rice. And he is really anti-veggie, although i have been making progress with corn and peas (he ate both last week! :yay: )So we have fallen into a bit of a run...
Monday -pork chops/ fish- roasted potatoes- veggie
Tuesday- chicken breast-rice-veggie
Wednesday-steak/ crab cake- baked potato- veggie
Thursday- pizza (I have a little and usually eat a big salad)
Friday-Sunday we go out

That is literally it. So alas I hope he thinks of something, since I am out of ideas!

I love tilapia too! Recently, I have found that many grocery stores offer tilapia encrusted with something. Wegman's has a hazlenut, a sundried tomato, a pecan, and so many others. I would recommend you try swordfish and catfish. Both are white, and very mildly flavored. Your husband may even like swordfish. Many are cut thick like a swordfish steak.

As for you and your husband. I like Cola Chicken or Pork chops. It uses a can of coke, ketchup, mustard, honey, and some brown sugar, and onions.

We also like pork chops in saurkraut.

Chicken I cook with Campbell's soup recipes on the can. There are sooo many.

I have also been known to find GREAT recipes on Bisquick.com. The impossibly easy cheeseburger pie is delicious and feeds us for 3 nights. I have also done a spinach and ham quiche-like thing.

When we get in a rut, I break out the slowcooker. Chili, Turkey Chili, Pork Roast, Beef Roast, Stews, etc. They are great to break up the monotony. What about spaghetti?

For veggies, I get the frozen bags/boxes from Green Giant, Bird's Eye and SteamFresh. I can cook the veggies I like and leave the rest in the frige for another day. Some brands even have individual size. I love to get asparagus, spinach, carrots and green beans.
 
I was also worried about your calorie intake. Join SparkPeople.com and it will give you a range of calories, protein, fat, and carbs that you should be eating. I've also heard you should have 1/4 of your daily calories at breakfast. I'd also be worried that you aren't getting the nutrients you need.

Remember to get a balance of fruits and vegetables and drink your water!

Thank you for your wisdom;) One thing I'd be happy to do is add some more calories :rotfl: I have plenty of veggies with my lunch salad and all I drink is water.

Think I'll grab an apple and have that this afternoon.

I had an interview this afternoon with my old boss and one of her co-workers - so I didn't get to have an afternoon snack till I got home from work.

So for me today so far I have had:

B-
56g Kashi Autumn Harvest (190cal)
5 oz milk (52 cal)

L- Soft Taco (leftover)
1 whole wheat tortilla (130cal)
2oz taco meat with onions & garlic (93cal)
14g FF cheddar cheese (23cal)
60 g tomatoes (8 cal)
20 g lettuces (3)

D-Quesadilla (trying to use the leftovers from last night's taco's)
2 whole wheat tortilla (260cal)
2 oz taco meat with onions & garlic (93cal)
28g FF cheddar cheese (45cal)

S-
14 g macadamia Nuts - (98cal)
28g whole grain pita chips (110cal)
30g hummus (50cal)

Total 1155


My range is between 1200-1500, so I'll need to eat something else for a snack. Not sure if I'm going to have yogurt or another serving of whole grain pita chips and hummus. Its nice to have something to look forward to.

When I cook I try to cook as whole as possible. I don't use canned soups unless they are all natural or organic. Acutally I don't eat anything unless its all natural or organic. I am really careful to read labels and really try not to eat things with chemicals or artificial ingredients. It makes it harder to find recipes, but they are out there. I try to cook as much as I can with all whole and natural foods. Luckily there are lots of all natural and organic foods - I love Whole foods!

Trish - Adding Veggies adds up - it's nice when you realize you can eat more!!

lilsweetpea- I love tilapia too. I just found a recipe in my WW book for a crusted tilapia with capers. Let me know if you want the recipe. I'm a huge fan of salmon though - there isn't a fish I won't eat lol - even love fish raw (Sushi)
 
Hi everyone~

Ended up having 1,400 cal. yesterday, not bad;)

Today I've had a yogurt 60cal, Curves snack bar 100 cal.
For lunch I'll have one slice of cheese pizza since that is what were having at work for a meeting
Dinner - not sure yet


I feel kind of bloated today. Is that normal in the beginning???
 

Trish, Are you drinking enough water? Sometimes I feel bloated off and on (usually around that "wonderful" time of the month).

I went to the doctor today for a physical. Everything they checked was good except my eyes. I was asked to read the ey chart down the hall. I did fine on both eyes. I did fine on the right eye. and Then my left eye was all blurry. She took away the chart before my eye adjusted. I guess the doc will send me to the eye doctor. I also had a full bloodwork done, so we'll have to wait and see how that all turns out.

I had to fast until my bloodwork, so I am had a mini breakfast at 11. I had an apple cinnamon muffin and a banana.

For lunch, I am having 1/2 roast beef sandwich, sun chips, and raw veggies.

For dinner, I forgot to take anything out. :-( Maybe I'll cook up some of the spaghetti that I have frozen with a salad.

My goal is related to my next Tae Kwon Do testing which is June 16th. So this Summer vacation challenge works well to match up to testing!

I wrote a note to my master instructor that I want to loose 25# by the next testing, so this thread will be perfect! It is just a little over 2# a week. (I am starting over as of today...I am in to the week 3 days, and I need to loose 1 extra pound - does that make sense?) I wrote him that note because I know he will hold me accountable to it, or he will really kick my but!;)

Just like you Melanie, I went back to WW. It has worked for me before, I just have to work the program. And most importantly - believe in myself. So, I start today with WW. So far so good. :thumbsup2

I doubt I am drinking enough. I read somewhere (probably here) that you should divide your weight by half and that is how many ounces of water you should drink. If that is true, I should drink around 77 oz a day.

I am no where near that!! I probably drink around 49 oz or so.

Makes me gag to drink water when I feel bloated.
