Could Epcot be skipped?

DD3 loved Epcot. Spaceship Earth, Turtle talk with Crush, the Living Seas, Figment/Imagination, Princess Breakfast at Norway, seeing the street performers, the jumping water fountains, Illuminations, checking out the different countries, the kids stations in each one are great with little activities for them at each one

I actually think Epcot is a great choice for this age, because it's a little more laid back, the pace is a bit slower, so you're able to relax some. The other parks just feel so much more hurried to me, rushing to get on this ride, that ride, standing in lines, all the things going on. It's also laid out larger, so she could get out of the stroller and walk some without the sea of bodies all around and being worried about her being trampled.

Personally I would skip Sea World, but that's just a WDW nut talking!
 
My girls have always loved epcot. We have been when both girls were very young. They loved it.

I think your 3 year old would enjoy doing the masks and some of the rides.

My girls favorite ride in all of the world is the Mexican boat ride. We have to do this first thing every trip. And several times thereafter.
 
I ahve a 3 year old daughter end a 4 year old son. They love Epcot. There are water play areas that i let them get wet in. DS loves TT. They like living with the land, and the rides in Mexico and Norway. My daughter love music so the live performers in WS are a huge hit. They could spend all day at the kid cot stops if i let them. The CM in world showcase seem to have more time to interact with kids. I should add that DH is Morroccan and the kids love Morroccan food so that is also a big draw for us.
 
Just to add my 2 cents....I don't think it would be the end of the world if you skipped EPCOT. That being said, however, if you find when you get in that after napping, etc., you have the time and energy, I'd head over there. The places I'd reccommend for one that little are the Journey Into Imagination and the Living Seas. They are the ones that the little ones get the most out of. You could try to make reservations at one of the restaurants, too, and wander around the World Showcase. Maybe a late dinner after having a later lunch?
If you choose to go slowly and only try to hit a few targeted things, it shouldn't be too overwealming, and you'd get to see some neat stuff along the way.
If the choice you have to make is push going to EPCOT when you have a tired overwealmed family, then no. If it's to go to EPCOT or hang out at the hotel when you're feeling okay, then I'd say try to get over there.
