Has anyone stayed at any of the DVC Costa Rica resorts? Which one and how were they?

There are none. They don't exist. If you are referring to RCI resorts to book using DVC points, they might exist. Which ones are you looking at?

We've never tried this (use all our DVC points for Disney vacations), but we have been to Costa Rica three times.. most recently just two weeks ago. I haven't stayed in Guanacaste region, but here are two other recommendations:
Hotel Bouganvillea in Santo Domingo (near San Jose) is lovely and reasonable ($100/night). Great place for your first and last nights if you are flying into San Jose. Gorgeous gardens, nice pool, good food, near InBioparque and Britt coffee plantation/tour.

Try Arenal Springs Resort and Spa near La Fortuna. Not in any of the guidebooks yet. Google it. Beautiful thermal springs pools, wet bar, spa, gorgeous views of the volcano from every room. $145/night includes a full breakfast for two. They greet you with a cool towel and a fresh fruit drink when you arrive. Dinner at the hotel restaurant was not great, but breakfast was good and the thermal springs pools are amazing.

If you get a chance to visit Earth University, they offer really interesting tours on sustainable agriculture in the humid tropicals. Hacienda Pozo Azul in the Sarapiqui region has a wonderful canopy tour (zip line through the rainforest) and horseback riding.

There are 7 on the DVC exchange list though I don't see a Melia on the list nor do I see it on RCI directly for CR. Several are All Inclusive mandatory. The other resort you list is AI optional I believe. I haven't stayed at them so can't say much there.

From what I can see, there's only 1 resort near enough to the city of San Jose to make it a reasonable trip to go back and forth, and it's not on the DVC exchange list. You may want to go to TUG (Timeshare Users Group) and read about the resorts there and maybe ask for opinions and information. RCI has their own reviews and you can get to them at RCI.com for all resorts, not just the 7 on the DVC list. Last resort, tripadvisors.
