What's a good price for corned beef? Every year I say I'm going to make it, and I don't. It's on sale this week for $2.99/lb but since I rarely buy it, I don't know what a good price is.
 
I'd say that's a good price. I just saw it at Walmart for $3.59/lb., and I got one at Costco for $3.39/lb.

What's the cut? I like flat cut the best-- the cheaper cuts tend to be really fatty.
 
The last couple of times I paid about $11 for a smallish piece. You're gonna get a big chunk, so it's going to be expensive. But it'll make several servings.

I've always cooked it on the stove top, bring it to a boil, then turn it to low heat and let it simmer. You can't really over cook it either, so start it early.

As for the fat, it helps add flavor, but if it's just on the bottom, I usually peel it away before serving.
 
The best sale here is always the week before or the week of St. Patrick's day. I think it usually ends up less than $2.00 per pound. I alwasy buy the flat cut and cook it in the crock pot. Cabbage will be next to free next week, too. Usually around 19cents per pound (normally here it's at least 69cents per pound).
 
The flat cut goes for about 4.50 per lb around here when not on sale.

Just remember they shrink alot when you cook it.

I throw it in a pot of water, let it come to a boil and simmer for 3 hours. (I usually add an onion, a few cloves of garlic, and the spice pack if it comes with it)

At the 2 hour mark, I add potatoes and carrots.

At the 2.5 hour mark, I add the cabbage.
