cornbread?

I think I'm going to make some cornbread for thanksgiving. my question is, can I make it in the morning, or should I really wait to make it until right before we eat? I'd prefer to do it early. I do have 2 ovens, but things get so hectic during that last hour/half hour before serving that to get one thing out of the way (and cleaned up!) early sounds pretty tempting.

what do you think?
 
I prefer warm cornbread, but it's pretty darned good later in the day too.
 
I usually make it the night before, undercook it just a bit then warm it up for dinner.
 

You can cook it ahead, just pop it back in the oven for a few minutes before serving to warm it up a bit. I use the Jiffy corn muffin mix, it's easy and very good. You can also make it in a pan if you'd rather, the box has directions for both so whatever is easier. If you make it in a pan, use two boxes. If you make the muffins, one box = six muffins.
