One thing to know about the wine list in the restaurants other then Remy and Palo is that there are actually 2 wine lists. There is the list you find on your tablet when you arrive and the one that you choose from if you buy the multiple bottle deal.
There is a second list which if I remember is called the signature wine list. It sports a number of really nice slightly and generally somewhat more expensive wines. Ask your server for this list. On our last cruise I had a wonderful bottle from the Lasseter winery.
It does take a bit for them to get these wines since they're not kept in the dining rooms. I once had the head server show up with my bottle a bit out of breath with a sweaty brow apologizing for the delay.
