Cookie Exchange recipes?

I have a Mother/Daughter cookie exchange coming up. I have to make 8 dozen cookies. Does anyone have any ideas for something that is easy and good? Please share.

I usually just mix in Raisins with it but I've mixed in mini M&Ms in there before. The candy coating does melt tho. Making the cookie looks messy, but still very yummy.

I found a couple of easy recipes on the food network website. Some that were no bakes sounded like they were very easy and good. I have not tried any yet, but hope to before the holiday.

I love making the round pretzels with a Hershey's kiss melted inside with an M&M on top. I have made them since my kids were really little since unwrapping the kisses and placing them inside the pretzels is something they can do all on their own. My brother is not a huge "sweets" person, but loves these with the mix of sweet and salty.
