Confused on alcohol policy

I know you can bring two bottles of wine and a 6 pack of beer per adult on cruise.
So when we get off in Mexico and Grand Cayman, can we get a bottle of rum to enjoy the rest of the week? Have you had a personal experience with that?

You can purchase rum, but it will be confiscated and tagged for you to pick up on your way off the ship.
 
You actually can't purchase rum in Grand Cayman when sailing on dcl. Grand Cayman has a rule that booze purchases by cruise passengers must be delivered directly to v the cruise ship and dcl has a policy of not accepting port deliveries.

Beer and wine are listed specifically because that is all that is allowed. Hard liquor is not allowed to be carried on board for consumption. The confusing part is what is or isn't considered beer sometimes, but rum is certainly not.

This is actually not true: I personally purchased 6 liters of Tortuga Rum along with several rum cakes from the shop right next to the Pier. They walked us through security, once we were on the tender boat they passed me the bags and off they went.

Yes you can buy liquor in ports and bring back onto the ship. As you enter the ship from a port you must pass back through a security screening where they will take the liquor and mark it with your information to be picked up the last morning at a table in the lobby beside the door where you exit the ship. You will not be allowed to consume it during the cruise.

Also, the 6pk cannot be larger than 12oz per bottle/can. I called to check yesterday, it is not a fluid oz thing. I wanted to bring 4 16oz which would be less than 6 12oz and they said nope. They cannot be larger than 12oz.

I've read many times that there are liquor stores close to the port in Grand Cayman that will walk with you back to the pier area (carrying your puchase), and hand you your liquor after you've passed security. Sort of a "delivery" process, but allowed. Not sure if DCL allows it or not, but I don't see why not.
