Take a small can of pineapple rings and cut the rings into bite-size pieces. Save the remaining pineapple juice that's still in the can.
In a small bowl, I mix a tablespoon of mayonnaise, a tablespoon of low fat sour cream, and a 1/2 teaspoon of sugar. Set it aside.
In a large bowl, toss the pineapple pieces in with shredded cabbage and shredded carrots. NOTE: You can buy the already packaged cole slaw at the supermarket.
Once the slaw is mixed, pour in the pineapple juice and stir in the mayo mixture. Taste and, if needed, add a bit more mayo and/or sugar.
