Mold? I've never heard about that. But it makes me wonder how often (if ever) housekeeping cleans out the coffee pots with white vinegar. Maybe bringing some white vinegar would be a good idea. The thought of drinking moldy coffee-Yech!
It's the machine not the pot that could have mold in itThe don't clean with vinegar, they may run the pot through the dishwasher in the larger units.

I've only know vinegar for descaling a machine - not necessarily for cleaning.
The instructions for our machine, a Mr Coffee, says to run white vinegar through every 45 days. We even have a cleaning cycle-the pot runs half through, then stops for 1/2 hour, then the other half runs through. But I'd much rather be able to get away with water and just a tablespoon of vinegar.
And I believe that is descaling as most water will leave deposits over time which in a coffee maker means it will plug up and not work as well, or at all if it's long enough.
