When we went to Guest Services on Sunday morning, at that point it was still supposed to be a 9-night cruise, the form they showed us had the rates for a NINE NIGHT cruise, so we'd know how much to increase. We added a lot more to each person's tips over and above the 9-night rates, and then bought the tickets to give to them. On the last night, knowing it was then a 10-night cruise, we gave a little more cash to our room steward and servers. I heard from someone that their servers told them that Disney DOES indeed make up for lost tips in a situation like this.
Just want to add, NONE of our servers, room steward, or other CMs we encountered, lost their wonderful attitudes through all of this!
I guess they were happy to know they'd still get paid, either way. We felt the CMs deserved every penny of the tips we gave them.
