First time going through the process of renting DVC points, so I apologize in advance if some of my questions are very basic If i utilize the points...could I also just make reservations through the resort for the other days that are not covered with the points? If so, then I'm definitely interested.

Yes. You can contact Disney directly or check their website and if available, you can reserve those 2 days. Will send you an email regarding the points rental.
