Class potluck

I have a class potluck tomorrow durning lunch.
I get to bring a maindish.
Does anyone have an easy & quick ideas?
It needs to either be in a crockpot or easily reheated.

I recently did pulled pork sandwiches for a work potluck per recommendations here on the DIS. Just pop a pork roast (any cut works), add whole bottle of BBQ sauce to crockpot, turn on low and let it cook! Buy buns and you are good to go! It was very popular and tasty!

That sounds pretty good. How long did you have it on low for?
 
4 hours on high, then to low/keep warm if need to buy time. Or if you have 6 hours, then go with low.
 
I actually did a macaroni and cheese dish for my DD's potluck at school. I used the boxed kind. :rolleyes: But I tell you, they finished my whole platter!
 
Over on the budget board I had started a thread looking for a specific mac & cheese recipe. Not only did I get the one I wanted, but lots of other mac & cheese recipes. There are a couple that are made in a crockpot that I'm going to try over the summer so I don't have to heat up the house! Take a look over that that thread ... you might find one you like!
 
Mexican Chicken

1.5 - 2 lbs boneless skinless chicken
1 can diced tomatoes w/mild green chilis
1 can black beans
1 jar salsa con queso


Put chicken in the crock pot with tomatoes and beans. Cook on high for 4 hours or low for 8. Remove chicken and drain off excess liquid. Shred chicken and return to the crockpot. Add the salsa con queso and mix well. I serve it with tortillas, sour cream, shredded lettuce and salsa.

I use the mild salsa con queso as we don't like things really spicy, but you can make it as hot as you want by using the medium or the hot.
 
How about some toasted Ravioli for a finger? Can be served with marinara sauce and is easily heated up in a microwave super quick?

Breaded Ravioli

Ingrediets:
• 1 package (16 ounces) frozen beef ravioli
• 1/2 cup dry bread crumbs
• 1/2 to 1-1/2 teaspoons salt-free Italian herb seasoning
• 1/4 cup reduced-fat Italian salad dressing


Cook ravioli according to package directions; drain and let stand for 10 minutes. In a shallow bowl, combine bread crumbs and seasoning. In another shallow bowl, pour dressing. Dip ravioli into dressing, then coat with crumb mixture. Place on baking sheets coated with nonstick cooking spray. Lightly coat ravioli with nonstick cooking spray. Bake at 400° for 8-9 minutes or until lightly browned.



I make this whenever my nephew comes over for dinner since he is a picky eater but likes the breaded raviolis. Just use the smaller raviolis, the large ones do not work too well.
