DS was there last year, he was 3, with cousins (6 and 10). We were not the only people with kids there. The waiter was fantastic, the kids still talk about him. Our kids are well behaved in restaurants but not perfect, and all was fine.
Kids are welcome everywhere at Disney. If your child can sit through a signature dinner, think at least 1-1.5 hours, then absolutely! If after spending all day in hte parks will be too tired, then maybe not a good match.
Nothing worse than spending the $$ at a signature restaurant and having an out of control child ruining your meal
Please note, I DID NOT say the op child WAS out of control, but we have all witnessed the meltdown child
MY DD would never let me enjoy a good signature dinner. She would be bored and even though she would not disrupt other diners *I* would know she was ready to go and wouldn't enjoy my meal. I've wolfed down enough meals in record time to know better, LOL. (Now she goes to Neverland Club once per trip so I can enjoy a nice leisurely dinner with no characters or entertainment of any sort, save the food itself.)
However, if your child will sit through it and you can enjoy your food, then I say go for it. I've seen plenty of kids in all WDW restaurants. Most of them have been well behaved. The signature restaurants have the best kids desserts too!

I really would not chance it, there are too many what if's. You could do Neverland if you are comfortable with that, or just do a regular sit down. To test the water so to speak.
I've had a 2yo at Artist Point before, and it went fine for her and the other patrons. She fell asleep within moments of us being seated, and woke up just as the bill was being paid. I will say *I* enjoyed my meal at Citrico's sans preschooler much more than I enjoyed my meal at Artist Point with a preschooler asleep on my lap.
DD6 is fully capable of sitting through a long boring meal, but we both enjoy it more if she does something else instead.
The signature restaurants are still very kid friendly.
The exception of course is V&A's, but Citricos is fine for average kids. We have taken both of our children to signature restaurants at that age and younger, and all has gone well.
I would only worry about it if your child was quite a bit more "exciteable" than the average 3 year old. But otherwise, go and have fun!
Children are welcome in Disney Signature restaurants. However, please don't be a rude parent who brings/stays with a child that is not able to behave in a way that won't distrube the other patrons. If your child can sit without crawling around all over, or making loud noises for more like 1.5 to 2 hours then go for it. If they can't please go somewhere else, or at least leave the restaurant when they become disruptive. Signature Dining is not cheap and its not nice to ruin it for others
