I don't think it can be done as the Castle doesn't have a regular menu for breakfast or lunch and soon won't for dinner either. Meals are (breakfast and lunch) and will be (dinner) a fixed price with a set menu, giving you only a few options. There is no ala carte dessert menu. Sorry
starting in february no. all 3 meals (b, l, d) at the castle will then be a set price & menu prepaid in advance, no ala carte.
but if youre going before then you could make a adr & get dessert only. if i were you i would go to the grand floridian instead though, its close by & they have some great desserts. special order the cinderella slipper or dog bones yum.
If someone went to Grand Floridian for desert and had the dining plan would that be considered a snack? On some menu it had deserts as snacks. Is there any way you could get the desert off the dining plan without eating a whole meal?

2:30pm is during lunch time, though, so they wouldn't be able to do it beforehand, either.

I assume you mean one of the table service restaurants? No, if you go to a table service restaurant and use the dining plan for any part of a meal, it's counted as a table service credit. You don't have to order a whole meal, but it still counts as a TS credit no matter what you order.
