That's just a form response that doesn't necessarily mean they can alter the dish as needed.
I may be skeptical because I had so few g-f/d-f choices when we were at WDW in the fall. We eat almost entirely at TS because DH is allergic to peppers of all sorts and then I'm g-f/d-f intolerant. What was g-f wasn't d-f on the allergy menu and vice versa most of the time. If I didn't fancy the one dish that was okay, there was often nothing but steak and salad, because chefs said that most menu items were now pre-prepared and couldn't be made safe by leaving out the unsafe sauce or serving it on the side, for instance.
Sad to say, unless things get closer to pre-pandemic allergy-friendly Disney, you won't find many accommodations made that aren't listed on the allergy-friendly menu. Only 3 TS chefs modified dishes for me. The others said they had no raw ingredients to give me a plain piece of chicken or fish, for instance, which is why I ate more steak than I wanted.
