The resorts begin decorating before Thanksgiving- not sure how soon. When we were there the week of Thanksgiving, the resorts were pretty well decorated when we arrived Sunday before Turkey day. The parks had a few decorations already up- but most of them were put up Wednesday night after the parks closed. The bulk of the park decorations were up Thursday morning- truly magical!
They used to do everything overnight on Wednesday before Thanksgiving and then "poof" Christmas would arrive with Thanksgiving.
With so many parks and resorts, they can't do that anymore. They start putting things up before Thanksgiving and everything is pretty much in place by the Day. I believe the Christmas shows -- Osborne Lights, Candlelight Processionall, etc. begin on Thanksgiving.
