Christmas Party - how soon do they sell out?

I want to book some dates at the end of November and beginning of December. Do I need to do it NOW? Or can I wait a while? This is our first trip during this time and I don't want to miss anything but it's better for our budget if I can wait.

Certain dates do sell out. Others don't.
It will be many more months before most dates will be close to selling out.
