The dinners are set prices. We booked in July and booked the dinners also.
You can only book a dinner in one of the hotels if you are staying there.
The dinners are every year fully booked and we saw many disappointed faces when the host at the entrance of the restaurant had to tell that there where no free tables.

You could always eat elsewhere. We didn't like the look of the Christmas prices or some of the menus last year and ate Christmas Lunch at The Lucky Nugget Saloon which was really nice and you get characters too! We did do the Tinkerbell Show another night which was good and worth the money.
