Christmas candy ?

I am planning on making a bunch of candy to use as 'filler gifts' this year. Is it too soon to start making stuff like truffles and fudge?
 
I think I would wait until a week before. Truffles and fudge may dry out.
 
I'm not really sure about truffles and fudge if you were to freeze them. If you left them out they would not still be good by Christmas.

You can make and freeze peppermint bark and/or oreo bark (my husband loves oreo bark the best!). It always freezes well. :)
 
I make truffles. I make them about 2-3 days before I give them away. I put them in the freezer. I also make peanut butter cups and freeze them as well. I get the same requests every year.
 

My sister made apple cider, salted caramels yesterday. They sounded odd, but they are delicious and they would last a long time I am guessing.:)
