Christmas Candy Recipes

this isn't candy really but it is SO EASY and SO YUMMO!

heat oven to 325

place square waffle pretzels on a cookie sheet. Set a rolo on top of each one. Bake for 4 minutes. As soon as they come out of the oven, press a pecan half on to the top and let cool/dry.

YUM! They are so good. Great for parties and people say "how ever did you make these?":confused3

caramel, chocolate, salt, nut ....what's not to like? !?! those are the main food groups, right?

All these recipes sound so good! I am making this one for DH as he loves turtles! :worship: Thanks - can't wait to see some more recipes :surfweb:as I always make a bunch of treat plates for all our friends and neighbors. DS9 and I will probably make them all next weekend! Can't wait!:goodvibes

well, that one is FAST -- literally 4 minutes plus cooling time. And if you're in a hurry, you can always sit them in the frig!
 
Does anyone have a good peanut brittle recipe?

Mine's a microwave recipe.

Ingredients
1 1/2 cups dry roasted peanuts
1 cup white sugar
1/2 cup light corn syrup
1 pinch salt (optional)
1 tablespoon butter
1 teaspoon vanilla extract
1 teaspoon baking soda

Directions
Grease a baking sheet, and set aside. In a glass bowl, combine peanuts, sugar, corn syrup, and salt. Cook in microwave for 6 to 7 minutes on High (700 W); mixture should be bubbly and peanuts browned. Stir in butter and vanilla; cook 2 to 3 minutes longer.

Quickly stir in baking soda, just until mixture is foamy. Pour immediately onto greased baking sheet. Let cool 15 minutes, or until set. Break into pieces, and store in an airtight container.

Snowballs

1 pck of Oreos (crushed)
1 12.oz tub of "whipped cream cheese"
white chocolate (melted)

mix crushed oreos with cream cheese in large bowl. shape into balls and dip in melted white chocolate. Cool on wax paper.
 
I make this for my grandfather... so easy and yummy!

Makes: 1 cookie sheet full, or approximately enough to fill a 48 oz. butter tub

1 c. (2 sticks) butter (must be REAL butter, not margarine)

1 c. light brown sugar

Approximately 1 sleeve Saltine crackers

1 package (12 oz.) semi-sweet chocolate chips

1) Preheat the oven to 350 degrees. Line a cookie sheet or jelly roll pan with foil (you can use either, as long as the pan has sides to it — some cookie sheets don’t), and then add a layer of saltines to cover the bottom of the pan, one cracker thick. You may have to break some of the crackers in half once you get to the bottom.

2) In a small saucepan over medium heat, melt the butter. Add the brown sugar and bring to a boil.

3) Boil for four minutes, stirring continuously.

4) Pour the brown sugar and butter mixture over the saltines, and spread the mixture out so it covers the pan evenly.

5) Bake for 9 minutes.

6) Immediately after removing the pan from the oven, sprinkle with the chocolate chips. Let set for about 45 seconds until the chocolate begins to melt, and then spread the melted chocolate out to form a thin layer over the crackers and toffee.

7) Let the pan sit in a cool spot until the pan is cool enough to touch. Refrigerate for about an hour, until the chocolate has hardened. Remove the candy from the pan and foil and break into bite-sized pieces.

What is a "square waffle pretzel"? If you give me a brand I can google it.

Easiest Peanut Butter Fudge

1 tub plain white icing
1 jar (reg. size) creamy peanut butter.

Pour both ingredients into a large, microwave safe bowl. Microwave for 1-2 minutes, stopping every 30 seconds to blend with a spatula. When well-blended, pour into a 9x9 pan and place in refrigerator to harden. Cut into squares before serving.
 
I use paula dean's chocolate peppermint bark- it comes out yummy

This is delicious. I make it every year or two at Christmas. If you use Planter's Dry Roasted, unsalted, nuts, it tastes like Disney's peanut brittle to me. YUM!

PEANUT BRITTLE

3 cups sugar
1 cup light corn syrup (Karo)
1/2 cup water
3 cups peanuts
3 tablespoons butter
1 teaspoon salt
2 teaspoons baking soda

Boil sugar, Karo and water until it forms a thread. Add nuts and continue cooking, stirring constantly until brownish-gold (300 degrees on a candy thermometer). Remove from heat and add remaining ingredients. Mix well. Quickly pour into buttered pan. At once, begin lifting on the edges to facilitate cooling, then break into pieces when cool enough to handle.
 
This one sounds a little strange--but I promise it is so yummy. I used to make toffee for years, but it requires careful cooking with a candy therm. and the perfect dry weather. I tried this recipe and have never gone back--it is my most favorite gift to give at the holidays.

Toffee Crunch
35 saltine crackers
1/3 cup butter
1/2 cup brown sugar
1 cup chocolate chips
1/2 cup chopped walnuts
Preheat oven to 400 degrees. Line a 15x10x1 pan with foil--I use the non-stick type--otherwise grease the foil. Spread the crackers in one layer to cover and set aside.
Place the butter and sugar in a saucepan. Bring to boil, stirring frequently. reduce to low and boil 3 minutes--do not stir. Immediately spread over crackers.
Bake 7 min. remove from oven and sprinkle with choc. chips. When they are melted spread them around to cover and sprinkle with the nuts. Cool and break into pieces.
 
Every year I make Lemon Bark and everyone LOVES it! I think because it is a different taste than the expected milk and dark chocolate, nut, caramel and peppermint flavors that become predictable in holiday treats.

People think that I slave forever making it but all I do is melt the blocks of Almond (white) Candi-Quick (I would rather use a higher quality but for the amount that I end up making it becomes entirely too expensive to use better quality white chocolate). Then I crush a bag of lemon drops and mix the 2 together. Pour it out onto jelly roll pans lined with parchment paper and voila! Wait for it to cool and break it into piece. That's it!

Y'all are awesome!! I love these recipes. Times are tough this year and I was trying to find some really good dessert type things to make for my family for Christmas and the friend gatherings that I will attend. These all fit my budget...:love: Thanks!

These are soo good. We dip them in chocolate and then drizzle a little white chocolate on top!! Yummy!!! Always gone so quick!
 
I use the same microwave peanut brittle recipe as in post #23 - always a family favorite.

New twist - spiced nut brittle
Use pecans in place of peanuts and add 1/2 teaspoon cinnamon

Yum!!!
