Christmas brunch ideas and after the presents are open eats.. ideas..Please suggestions needed

Absolutely tried and true:

FRENCH TOAST CASSEROLE

INGREDIENTS:

  • 1 LOAF FRENCH BREAD, CUT INTO 1 INCH CUBES

  • 3 CUPS MILK

  • 8 EGGS

  • 4 TEASPOONS SUGAR

  • 1 TEASPOON VANILLA (OPTIONAL)

  • ¾ TEASPOON SALT
TOPPING:

  • 2 TABLESPOONS BUTTER

  • 3 TABLESPOONS SUGAR

  • 2 TEASPOONS GROUND CINNAMON


Directions

1. Place bread cubes in a greased 13-in. x 9-in. baking dish. In a large bowl, whisk the eggs, milk, sugar, vanilla and salt. Pour over bread. Cover and refrigerate for 8 hours or overnight.

2. Remove from refrigerator 30 minutes before baking. Dot with butter. Combine sugar and cinnamon; sprinkle over the top.

3. Cover and bake at 350° for 45-50 minutes or until a knife inserted near the center comes out clean. Let stand for 5 minutes. Serve with maple syrup if desired.Yield: 12 servings.
 
I came across this French toast recipe in my local newspaper. I'm going to try this today. Seems pretty simple and something you can prepare ahead of time.
1/2 cup butter
1 1/4 cup brown sugar
1/2 tsp. cinnamon
1 loaf French bread, sliced in 3/4 inch slices
5 eggs well beaten
1 1/2 cup milk
Confectioner's sugar

Melt butter in a 9x13 inch pan sprayed with vegetable cooking spray. Mix butter, sugar and cinnamon in pan. Place bread on top. Mix eggs and milk and pour over bread. REFRIDGERATE OVERNIGHT. Bake at 350 degrees for 30 to 35 minutes. To serve, sift confectioner's sugar on top.
 
I admit, my family's favorite french toast was thanks to a vacation - I had leftover plain glazed donuts that were going stale. I made a quick custard (egg, milk, vanilla, sugar), split the donuts in half, soaked the donuts 2-3 minutes, and then cooked them up quickly in a pan. NO syrup needed and really pretty awesome tasting. Definitely not the healthiest Xmas breakfast (but the eggs and milk aren't bad), but it was so amazing. We now buy a box of glazed donuts every vacation just to have this breakfast (it's the only time I'll make it...and I make it with a fruit salad to lighten it up:))...
 

I always do overnight steel cut oatmeal for Christmas morning. Cooks in the slow cooker and is super simple. The toppings make it fun. We have the usual raisins, nuts, brown sugar, cinnamon Etc... But, add some special toppings just for the holidays like candied ginger, craisins, cookie crumbles, gummy worms, chocolate chips, well you get the idea. It's a great and simple meal that is always a hit.
 
If your dd loves traditional French toast, she might not love a baked casserole one. Some people don't. If you haven't had good luck in the past, one option is to make your own French toast. Make French toast for breakfast a few weeks before Christmas and make extras, allow to cool, package in Ziploc gallon bags with wax paper in between and freeze. Christmas morning put in a disposable pan, wrapped in foil, and reheat gently in the oven.
 
I have tried a couple but its like the edges get done but the center is mushy... Then I cooked it longer to firm it up but then the edges are dry and over done... Suggestions... to fix this..
Cover the casserole with foil until just about done,then remove foil for browning.

Great idea, also good for anytime for us on the weekends so I don't have to cook

Have you considered frozen French toast sticks? I got a box at Costco, and they were really good. They are super easy, too. I heated them up in the microwave because I was just making them for one or two people, but a tray of them can be heated up in the oven.
