We usually try to go the week before Christmas because it is our favorite time of year.
1) We have never been there over Christmas but have been there for Thanksgiving and if Christmas/New Year's is anything like Thanksgiving, I would avoid MK at all costs. It was sooo crowded we could barely move. From what I hear, that week is the busiest/most crowded time of the year so pretty much any where you go will be packed.
2) In the parks....The Brown Derby-Hollywood Studios; Le Cellier--Epcot; Tusker House--Animal Kingdom (buffet style); nothing at MK We have enjoyed good holiday meals at Boma at AK Lodge. Cali Grill and Narcoosee's are our favs but they are not in the parks.
3) The weather is usually quite pleasant. Jeans and t-shirts. Some wear shorts. I think it depends on your tolerance for cool weather. We find that jackets and sweatshirts are often needed in the early am or at night. I would pack warm clothes just in case.
4) No info on tuscan hills

My personal feeling is to avoid the parks on X-Mas Day and New Year's Eve because of wait times and crowds. Spending these day(s) at your resort would be just fine. If you do feel the need to visit one of the theme parks I'd choose Hollywood Studios. They have great fireworks on New Year's Eve. A lot of guests choose the Magic Kingdom and EPCOT so DHS is a bit less crowded. Don't get me wrong...It's still crowded just not extremely crowded.

I would normally not recommend the Fantasmic Dinner package, but since it will be extremely crowded you may want to do it to gurarantee yourself a seat. The seats inside the Hollywood Hills Amphitheater assigened to Fantasmic Dinner package guests are not very good, but like I said you'll be guranteed a seat. As far as restaurant choices I'd choose Mama Melrose. In my opinion it's the best of the dinner package restaurants.

Weather at the end of December is anyone's guess. We were there last New years Eve and it was very cold. We were wearing gloves and many layers at night touring the parks. The picture in my signature was taken at DHS at night while we watched the Osbourne Lights. It was very cold...Low 40's if I remember correctly. I also remember it in the 80s a few years back in December. It's really a crap shoot. Expect anything as far as weather. Check weather.com or the local news/weather websites about a week before your trip so you can pack appropriately. wftv.com or wesh.com are good local, Orlando resources.
