Chopped or whole cranberries in quick bread?Update...Yum

Hi,

I'm about to make the Pumpkin Cranberry bread recipe on the Libby's site.

Never used fresh cranberries in bread before. Do they just get mixed in whole? Recipe doesn't say to chop them, but who knows, LOL.

what do you bread makers do?

It's hard to say since they don't mention it, but I'd chop them...not finely - just very coarsely. I don't know about your family, but mine likes cranberries just fine as long as they don't get a mouthful - unless they've been made into craisins first! :rotfl2:

I'm not a fan of cranberries, to say the least. I thought this bread looked good, and I want to make some for my SIL's this weekend. We have an early Tgiving dinner to go Sunday and then our own on Thursday.

Definitley chop them! Biting into a whole unsweetened cranberry is not a pleasant surprise. I have a cranberry bread recipe that calls for coarsely chopped berries. If you have a food processor that's the way to go. They are not easy to chop by hand.
 

Hunnypots, I have a small kitchen Aid food chopper. That'll work? It's new and I haven't used it much.

Umm - I don't. We've been making a cranberry bread for years and the berries go in whole. When the bread bakes they end up sort of like blueberries in blueberry muffins. You actually get that little bit of tart (although it has sweetened up some in the baking process) in with the bread sweetness. My recipe doesn't have any pumpkin in it though.

we always chop ours but I don't know why you couldn't use them whole -- I use blueberries whole and I don't think it would be a whole lot different. :confused3

Hi,

Just made 5 mini loaves of this bread. Ended up used chopped berries in the mix.
