It also helps if the strawberries are at room temperature rather than being cold. Let them sit out for about a half hour after they've been washed. If still damp then use the above tip to get rid of the excess moisture.I just read this tip: the strawberries have to be absolutely dry, not a droplet of water, or the chocolate will slip off. Use your blow dryer on cool to get rid of any lingering moisture before dipping in the chocolate.
If they're really large strawberries, I like to hull them out and pipe in a cheesecake filling and dip the top in graham cracker crumbs. After that has hardened for a few hours in the fridge I melt the chocolate discs you find in te grocery store to dip the strawberries in. Good luck!!![]()
I just use a make shift double boiler and when it starts hardening I just put it back on. I have done them in the microwave but I am afraid that it cooks the chocolate, when you do it over and over again. All this talk is making me want to go get some strawberries! LOL

Wow, I am loving all the tips and recipes. I have a question.. Once the chocolate is melted (I bought Ghiradelli milk chocolate chips), how do you keep it from hardening?
Anyone ever use a foundue to make these?
